Tiny Victories

Taxes almost done…one more form for the merry-go-round that I need to call about during business hours tomorrow (nonprofit->state, state->me, me->state for whatever insane reason) but then it should be done for the year.

Two:

1)I got the hated multiple source sales numbers to the tax person. Always hate doing that.

  1. We went for our first walk without being bundled up to the eyeballs. It’s spring! :sun_behind_small_cloud:

:heavy_check_mark: Got the window info to the tax person, I have things related to DH and his retirement accounts left. He has to do this, not me I don’t have the account info.

Past me made an absolute fuckton of cheese sauce (froze what I didn’t use), so current me has a very easy prep for homemade mac & cheese!

oh that sounds amazing. And like something I should do. I love homemade mac n cheese, husband hates it, kids are lukewarm

:exploding_head::exploding_head::exploding_head::exploding_head:. WHAT!?

Does he like Kraft dinner?

yes! That’s the weird part - he’d RATHER eat KD than homemade!

This tells me his mommy never loved him

I get why folks like Kraft dinner - it has all those highly processed appetite triggers. Homemade mac & cheeses is a whole different thing.

Is it a baked mac and cheese you make from scratch? Or a stovetop one? If stovetop, maybe try a baked one on them next. I add some paprika and dry mustard for spices, diced onion too. Mix with the mac and cheese sauce. Top with bread crumbs and grated cheese, and bake half an hour. Absolutely delicious! Try this recipe with a 1/4 tsp. Paprika added to the sauce. I replaace onion and garlic powders with the real thing.

Totally different and I love both!

It is baked, and he has never liked it, regardless of recipe or how it’s made.

Oh my! That is weird! Usually people love baked mac and cheese and are not so fond of KD after trying it. My sympathies. That’s a lot of work to go to for someone to tell you they don’t like it. Plus real cheese sauce isn’t cheap to make anymore!

I have a friend the same way!

I added smoked paprika to the cheese sauce. And baked it, but I like stovetop too. Topping was crushed Chicken in a Biscuit crackers and parmesan (cheap Kraft parm). Baking always dries it out a bit, so add extra sauce. I always add mustard to cheese sauce too as it boosts the flavor.

N’s family’s version of macaroni and cheese is literally just noodles with cheese melted on them. Like cook the noodles, pour into casserole dish, put some slices of cheese on top and bake. They first made it for me after having previously made a lovely version of Ina Garten’s so I was unprepared for what I received. It is still their preferred mac and cheese variation, so I always clarify if we are having real mac and cheese or Last Name mac and cheese when they put it on the meal plan.

Don’t get me wrong I love flour tortillas with cheese melted in the microwave, but I would not call them quesadillas and serve them to someone as such. It’s an entirely different thing
