I was pretty careful baking the meringue portion. I thought it would flop in our humid climate, but I had all the fans going in the house to get our humidity as close to 50% as possible…which is the highest they recommend for baking one. We were at 51%.
Plus I was fighting with a hand mixer that wouldn’t give me stiff peaks, despite 10 to 15 minutes on burst speed! Thankfully, “almost stiff” peaks were good enough. In fact, one person commented on a YouTube video that not beating to stiff peaks actually helped prevent the meringue from cracking?
However it worked, it looked and tasted great!
