my standing desk was delivered 12 days early to my new apartment. This means that I can start full time living/working there in less than 7 days instead of the 20 days I was expecting. Only 7 more days of my crazy roommate
ETA: and, since I am not there yet, my landlord moved it into my apartment, so I don’t have to worry about lifting it. Double victory!
I ordered sushi and Thai iced tea for dinner, and the tea literally came in 24 oz soup containers! Delightful and so much tea YUM

Featuring slow cooker chicken and dumplings, oven roasted potatoes, carrots and asparagus.
Ooo, recipe? I tried chicken and dumplings in the slow cooker once before but wasn’t crazy about the recipe I used.
Was just about to ask the same.
I had a formal recipe to share, and then I realized I’ve modified it so heavily that the formal recipe doesn’t count anymore!
Crockpot Chicken and Dumplings
Ingredients
- 6-8 boneless skinless chicken thighs
- 1 can cream of chicken soup
- 4 cups chicken broth
- 1 shallot
- 2 garlic cloves
- 2 tbsp butter
- 1 can of pre-made biscuits (or your favorite biscuit recipe)
- Green onions
Instructions
- Chop and saute your shallot
- Season chicken with salt, pepper, and other preferred seasonings
- Layer chicken, shallots, minced garlic, cream of chicken soup and butter in slow cooker
- Cover in chicken broth
- Cook on high for 5-6 hours
- 45 minutes before serving, roll quarter-size balls of biscuit dough and place in slow cooker
- Keep cooking on high until biscuits are desired texture
- Serve with chopped green onions sprinkled over the top
Notes:
The original recipe says 30 minutes for cooking the biscuits/dumplings, I like mine better at 45 minutes.
When I say 2 tablespoons of butter, I mean that the original recipe says 2 tablespoons and I just glob it in there (probably closer to 3 tablespoons if I had to estimate).
If it sounds too salty, you can always substitute cup for cup broth and water.
Made my own oat milk. I’m almost ashamed at how long it took to try this, it’s so easy!
