Mushroom and cheese stuffed poblanos with breadcrumb topping!
This isn’t pretty but they were so cute in person! I cooked and pureed white sweet potatoes and russets together, added a bunch of spices, and fried them.
Quick veggie soup with try colored carrots, parsnips, and beans.
Pork medallions, fresh peas, and homemade mushroom gravy over egg noodles.

Someone asked me today what I’m good at cooking. I panicked. I thought it was everything? But apparently I need a specialty. Please help.
Oh, and I made the tomato onion masala today. It needs work, but it is an okay base for some curries. (I think I want more garlic and ginger, and I did up the cumin and I want less tomatoes). I used it to make a palak with some lentils in it. Fast and easy and unremarkable. I think that I have an idea of how to make it shine, but the world will need to stay tuned

what counts as salad?
Romaine hearts, chopped
canned albacore
Kalamata olives, pitted and halved
Red onion, sliced
Cucumber, half moons or diced
This dressing:
Pulled pork salad:
Romaine hearts, chopped
Leftover pulled pork (ideally plain)
Smashed or sliced avocado (works well with avocado pods)
Diced red onion
Chopped green chilies- works well with canned
Red salsa
A little olive oil
Chimichurri steak salad:
Spring mix
Sliced steak
Chimichurri
Bell pepper, diced (red is best)
Jalapeño, diced
Cucumber, diced
Chimichurri recipe:
1 bunch cilantro
1 bunch parsley
1 tsp dried oregano
3-4 stems green onion (except the very butts)
2 Tbsp red wine vinegar
1 Tbsp lemon juice
1/2 tsp salt
Red pepper flakes to taste (I probably do 1/2tsp-1tsp)
Optional: jalapeno with seeds and membranes included
1/2 cup olive oil
Place everything except olive oil into the food processor and pulse until combined (not liquified). Then pulse while drizzling the olive oil in. I prefer more of a chunky texture, some people go until smooth.

My old lunch standby: bed of spinach/arugala maybe spring mix. Hearty sprinkle of sunflower seeds and cranberries. Huge whomp of hummus. Optional leftover mixed veggies on top.
Cold soba noodles or rice noodles (soba tosses rice clumps). Thin peanut sauce. Cucumbers. Carrots? Broccoli? Kale
Yes! A huge amount of hummus makes salads so so good. Sometimes I add hummus AND dressing.
One salad we like is grilled chicken, lettuce, hummus, pepitas, red onion… I forget what else, probably bell pepper and cucumber, wet crunch cuts the hummus well.
Ooo, I love cranberries and sunflower seeds! Cold noodles are such a good idea. I get them out a lot but I never make cold noodle dishes, only hot.

DH Breakfast- Jalapeno, Potato, Red Pepper, Cilantro Frittata
My Breakfast- Smoothie (banana, blueberry, spinach, mix-ins)
My Post Workout- Edamame; Buffalo Air Fry Cauliflower + Yogurt Ranch; Eggs
Lunch Fri. -Sun. - Caprese Sandwich (fresh mozzarella, tomato, basil, rolls)
Lunch 2- Beef and Bean Chili (w/sweet potato + leftover veg) + Cornbread for dh
Dinner 1- Chicken + Green Beans and Mushrooms + Sweet Potato Fries
Dinner 2- Meat + Gnocchi and Veg. ? Or whatever, maybe those tamales and rice.
How will you avoid having smoothie all the time now lol

Making tofu and sweet potato sushi tonight! I’m also going to blend up a non alcoholic mango drink to make it extra special. Other things I want to cook soon: gobi manchurian, veg. samosas, shakshuka, and veg momos.
I need to use up avocados but I have literally nothing that they might go on or with. Like, not even bread for avocado toast. What do? Make guac, eat as is with spoon?
