Egg? Tomatoes? Salt? I’ve definitely eaten avocado with just salt on it before and it’s delicious :slight_smile:

I love avocado and eggs. I also like avocado with rice and sesame oil!

I just realized I think we have rice and some dried black beans… I should check. Maybe I could do a burrito bowl thing and top it with avocado!

Smoothie! Bake an egg inside. Mix with tuna. Sprinkle on salt and pepper and just nom down. So many options!

Or make tuna salad and put it in the hole of the avocado.

I just made this recipe and it was so good! I doubled it and tweaked the sauce just a bit based on what I had and it still worked really well, served with saffron rice. And I air fried after breading instead of oil frying.

Also made some sushi last night and going to make it again tomorrow night, sweet potato and tofu (both air fried) so it was inexpensive.

Air fryer was def worth it!

Mmm I love sweet potato in sushi. I should do this for myself sometime soon.

I’m trying to guess ahead of time for my energy levels and my abundance of produce.

I think I’m going to do a massive batch of pakora pancakes - I did that with the last bit of pakora batter last time and they were really tasty and sooo much lighter tasting. (Squash, zucchini, kale)
Spinach for smoothies
Cauliflower - maybe a cauliflower cheese? It’s huge so I’ll split it
Leeks - Soup! With the cauliflower! And potatoes! Mmmm
So many peppers - fajita peppers and onions
More squash and zucchini - muffins
Steam some kale for a salad or fresh
Old assorted veg - stock
Carrots - carrot sticks and shreds
Cucumber - tzatziki and dogh
A little of everything, rice bowls, fried rice

This is going to be a big cooking week. Hopefully I can batch some for freezing.

Does anyone have any obvious ideas that I’m missing based on all the listed veggies? We’re gluten free soy free right now. I’m mostly veggie, and we shouldn’t eat dairy but I can’t handle no dairy AND no soy.

peppers - sometimes I just roast a tray of pepper quarters, then peel and freeze, put into ziploc bags for later.

We have been eating a ton of Smitten Kitchen’s Zuchini Butter Pasta. I made it tonight with olive oil instead of butter and nutritional yeast instead of Parmesan and it was good.

What’s your fav pakora recipe

Dump chickpea flour in a bowl. It’s better when I throw in a touch of baking powder and cornstarch, but I don’t always. Season according to mood. Add water to make a thick batter. Chop veggies, stir in, adjust batter thickness. Heat oil in a karahi or wok. Make alllll the pakoras.

Do you/your dad/grandma make phlouri? My mum used to when I was little and I love them so so much. But they don’t use up any veggies. But phlouri and sauce is soooo good. Maybe I’ll do it for Christmas
