Just inventoried my freezer and decided to brainstorm some possible future meals. Nothing set in stone but this will help when I’m uninspired.
Meal ideas
4 ham hocks - 1 red beans and rice, 2 braised ti pang, 1 congee
1 pack chicken drumsticks - 1/2 coriander chicken, 1/2 pad thai
3 packs chicken thighs - 1 thai jungle curry, 1 chicken tikka, 1/2 chicken biryani, 1/2 hot chicken barley soup
1 small flank steak - beef lo mein
1 medium flank steak - mongolian beef
2 small brisket - 1 braised w/ mashed potato et al, 1 braised w/ pierogi, cabbage, beets
2 pork tenderloin medallions - with mushroom gravy and egg noodles, with wild rice stuffing and roasted vegetables
1 small minced eye of round - curry filled buns?
1 large bottom sirloin flap meat - tacos or fancy nachos?
1 thin sliced ribeye roll - bulgogi + banchan
1.5 lb. ground beef - meatball subs? spaghetti and meatballs? burgers?
Nice to know I can get at least 20 dishes out of this meat! So 20 meat dishes over 12 weeks should be perfect because each week we’ll have 1-2 meat dishes. Perfect!
Bulgur and chickpeas, homemade pickled beets, roasted chicken, grated carrots, salad, and tahini thinned with oil and lemon juice.

I’ll cut many in half and slow roast them, then freeze and put into ziploc bags
I’ll make others into a butter chicken base sauce and freeze in 1 or 2 cup containers

You can just freeze them whole if you’re going to use them for sauce later.
Is true. I’m hoping to do more processing because I only have so much freezer space (cooking reduces the water volume and makes it more efficient to store), and because I like to have some meals in the freezer 50-90% done for the days my future self doesn’t feel like cooking.
Today I grilled peaches and put them on top of arugula with burrata and prosciutto. It was delicious.
I made this simple pasta dish and it was shockingly good. Perhaps because I used chopped garden tomatoes instead of canned?

Ha, I have 5 gallon bags of tomatoes in my freezer right now, I feel this pain. At some point I’ll be able to store actual meals in there…
I have 4 trays of roasted tomatoes done. And a batch of lentil curry, a batch of butter chicken sauce. I think I will try for one more batch of butter chicken and then call it complete.
I’ve made this before and remember it being delicious.

My avoidance to throwing out food has reached a new level. I made wasabi mayonnaise because I had a little tub of wasabi from my takeout sushi the other day.
I guess I now need to find ways to use up wasabi mayonnaise. Salmon/zucchini/corn cakes likely suspects, but I’m open to other inspiration.
That would be killer on a sandwich.
