Do you have a go-to vegan “grain/salad bowl” style recipe that you like?

Ideal for me would include:

  • cooked grain or legume
  • greens or cruciferous vegetable
  • maybe a tuber (cue: it’s no a tuber! joke)
  • no garlic/garlic easily subbed out without removing flavor balance

Optional - tofu or other plant-based protein

I like quinoa, broccoli and red pepper, and then I throw some curry powder and salt on it. I dunno if it really is complex enough to qualify as a recipe.

We got some green cabbage in our CSA bag. I love it but I’ve never prepared it before. Anyone have a favorite way?

Edit: I suppose sautéed is the easiest but looking for something fun

Budgetbytes is the best.

I am also a big fan of cabbage+vinegar based slaws – cabbage, radish, carrot, bit of onion, all julienned or grated into a big bowl. Heat up enough vinegar to coat the slaw with a bit of sugar, caraway, fennel. Combine. Let sit. Eat.

Yum and easy! I love a good slaw but have not attempted to make my own. Okay- I’m not so scared of that large head of cabbage in my fridge anymore.

Homemade slaw is so nice and easy and versatile – it’s really just a salad where you put in especially crunchy ingredients that are happy to sit in dressing for a long time.

My grandma always smothered hers with mayo. Fine for the occasional BBQ dinner but vinegar only sounds much more appealing as a home side dish.

Same. I like a mayo-based slaw, but I especially love to use our slaws on tacos or as a salad base and I like it better then if it’s vinegar-only.
