Overnight oats are cold and pointless. But to taste like the packets…bottom layer of the jar is apples or dried apples. Then brown sugar, then cinnamon. Blend some of your raw oats and leave others whole, sprinkle on top, add liquid let sit overnight. But seriously, just eat warm oats. Like do all that but not the liquid, and add hot kettle water in the morning.

I agree that cold overnight oats are completely disgusting and I have no idea why recipes online keep trying to convince people that’s how to eat them!

I used to make a week’s worth of overnight oats every Sunday and take it to work every day. This was simpler than keeping oats and almond milk and jam or fruit at work and assembling it in the morning - much easier to grab a jar and take it with me. But then I heated it up in the microwave and it was pretty good, thick and creamy. Cold oatmeal is always disgusting, in my opinion, I don’t care what hipster artisanal term people try and dress them up with!

I just bought soy curls for the first time. Does anyone have favorite recipes? Or do I have to suck it up and venture into Vegan Food Blogs without a guide?

I am comfortable with so much sugar. I figure it’s better than Nutella or a pop tart so I’m coming out on top.

Oatmeal or yogurt (in summer) pairs nicely with raspberry jam and chocolate chips. Quantities of chocolate chips can be adjusted based on mood.

Do you put nutella on the poptart? I think that could be nice

I only eat brown sugar cinnamon pop tarts so I don’t think Nutella would pair nicely.

I don’t know if this has already been mentioned (I just saw this thread and haven’t read through it!) but I discovered this afternoon that budget bytes has meal plans you can buy! They are 4 weeks with 6 dinners per week and one night of leftovers/eating out. You get a pdf download of the monthly plan with weekly shopping list and a big download that has all of that plus the recipes and her tips for using up all of the ingredients that you buy for those specific meals each week. So far she has made 2 “volumes” (months) for each of her categories (omnivore, vegetarian, no rice or pasta, and under $10 meals). Each one is $12. I’m excited about trying it out next month! I bought the first omnivore one.

Anybody have favorite persimmon recipes? Preferably something minimal as I’m not a chef. I have 4 to work with and there hasn’t been a hard freeze so they probably won’t be that sweet. I anticipate another, larger haul from the neighbor’s tree as soon as the temp drops!

With four to work with, I’d make persimmon cookies. This recipe is pretty close to mine, which actually calls for acorn (you can use any nuts, really, or omit if you don’t want them). If what you have are small native persimmons, you may want to use all 4 in a batch of cookies.

Looking for recommendations for butternut squash soup recipe if you have one you like, preference for (1) vegan; and (2) no coconut.

Can cook on stove top or instant pot & finish off with immersion blender.

I made this one. I am meh on squash but liked this.


It calls for butter but says you can sub olive oil.

I find it helps to use really good broth. I used vegetarian no-chicken Better than Bouillon, which I find very flavorful,
