I make the bacon ones and double the recipe and cook them in the smallest glass canning jars according to the instructions in my 8qt insta pot, but with the lids finger tight. It makes 12 little jars. I reheat two in their jars for a minute in the microwave for breakfast, and they usually pop right out onto the plate afterwards.
I keep meaning to try the other one! More veggies are good!
Mellow Mushroom Mushroom used to make a tempeh sub that was out of this world. Tempeh, lettuce, tomatoes, some kind of pepper (banana?), a savory white sauce. Bread was toasted, tempeh and sauce were warm. Could you try a sub or sandwich with similar properties? Sadly, mellow mushroom doesn’t offer that anymore, but they will put tempeh on a pizza or in a calzone, and those are good, too.
I am reading that one always must steam or boil tofu before following the rest of a recipe because otherwise it will be bitter.
I think I tried tempeh once before and hated it, but I am sure I did not do this step.
What would you guys make for this meal train?

-Weather is warm where I live.
-No beans/lentils, soups, or couscous bowl

Beef ok! Thanks. Would you do like a bowl of all those things? I’m not in the habit of eating Mediterranean food at home so not sure what makes sense as a serving.
Does “no beans/lentils” mean no chickpea based products? I was going to suggest falafel but there’s a lot of chickpeas in that (and hummus).
Ill post a recipe that I love but you would have to find a different protein than the chickpeas. If nothing else, I use this recipe to just make the cauliflower portion all the time and it’s delicious on its own or in a bowl/wrap/etc.
Awesome! I adore this recipe but usually leave out the dates personally and I’m 50/50 on whether I include pomegranate seeds or not. It’s delicious with our without either of those things and even though there are multiple steps it mainly uses two bowls to prep everything in while the previous step is in the oven.
