Are we talking mediterranean diet or mediterranean theme? Mediterranean diet is used in health circles to talk about unprocessed mostly veggie but some fish and meat blah blah blah vs food from areas around the mediterranean.
I think a veggie shepherd’s pie would be fun, without beans or lentils or processed meat substitute I’d do diced veggies.
Or 2 veg curries with rice or flatbread and maybe tandoori fish or boiled and peeled eggs
Can we do a rice or soba noodle bowl with peanut sauce? That was my first thought hours ago but I forgot it. My brother does a version of this (usually sesame) for every occasion and I love it every time.
Muffins and mixed nuts and a fruit salad is also always a solid option since people love doing heavy dinners.

oh, muffins is a great idea. when my family was a recipient of something similar (so much lasagne), the muffins were a lovely break from the ordinary.
I got okra in my produce box. Any suggestions for what to do with them? I’ve only made them once before in a big sheetpan roast thing with a lemon honey dressing and feta.
I also have cucumber, eggplants (3 long and 1 Italian), carrots, cabbage, lemons if that sparks any ideas.
Okra is one of my fav veggies and I have a really hard time finding it here. Growing up in the south my mom cooked it so many ways…I’d say fried or pickled is best if you aren’t a fan of the slimeyness that can happen in a braised dish or soup (although it is amazing in gumbo)
The most delicious is probably breaded + pan fried or deep fried (you can bake, too!)
My mom made a similar dish to this all the time in the summer when we grew a lot of okra, but she never added bacon or any kind of meat, just veggies

I love okra the Greek way: stewed with tomatoes. Like this (haven’t made this particular recipe but the idea is the same)

Thinking about using it as a base for egg roll in a bowl but that means sauteing it and also it’s already got more oil in it than I usually eat.
Could you maybe toast it a little in the broiler instead of sautéing? Use the existing oil?
Sriracha? Drain the dressing and add more vinegar?
I would add more vinegar, more garlic, more ginger. That was very conservative amounts of flavor for 2lbs of cabbage. (And more sesame oil if you’re comfortable with the oil amounts)
Maybe? Or cook it just a little in a pan or maybe the instant pot sauté feature (bc there is a LOT) so that it isn’t like eating gobs of raw cabbage?
