Oh yummmmmm
I kinda made a meal plan but did not fully plan nor did I assign specific meals to specific days. I’m still trying to re-find my cooking mojo and adjust to full-time work again so I’m playing it loosey-goosey here.
Meals 4/6
Curry noodles- Made this on Tuesday(?), did not like. Too much heat for me, Son apparently doesn’t like coconut milk which I love and was the main reason I was interested in it. I sadly threw the rest out because I knew we wouldn’t eat it. Sigh.
Kielbasa pierogis- made this last night for the second time. Still delicious and easy and Son loves it.
Cheeseburger and fries- no recipe, it all comes from my freezer because I’m tired after work
Salmon w/creamy lemon dill sauce, mashed potatoes, asparagus
Coca Cola chicken wings, rice, broccoli
Samosa pie- can’t wait to make this again, it was so good last time! Will probably do it Saturday
Frozen TJs pizza - Tonight’s dinner.
*Be assured I’m taking short cuts wherever I can in these recipes. Like, I’m not peeling and chopping potatoes, I’m using diced frozen potatoes. The broccoli gets cooked in the microwave. The mashed potatoes will be instant. I very frequently use frozen chopped onions when I need onions, but if I want sliced onions like I do for the pierogi dish, I use the mandoline so it takes no time. But I’m also cheap, so I make my own crème fraîche. It’s two ingredients stirred together plus sitting time so it’s not like it’s hard. I don’t think I take any short cuts in my baking, but putting dinner on the table (almost) every night is another story completely.
Thursday I made 3 kinds of potatoes instead of eggs, and mine had TVP. Is TVP a recession indicator?
One night we had tandoori chicken/paneer and the kids supplemented with 5 hotdogs.
Last night we did the fish fingers and I had a burger instead. Pretty close to plan!
So next week…
Biryani and bindi for me. Maybe channa
omelettes/tofu
pita pizza/pizza salad w peppers, mushrooms, onion
GF RAVIOLI - what sauce should I do? I can make a marinara or we have jarred alfredo
Tofu/ fish tray bake w salad
Soup - cauli cheese, lentil carrot
The cauliflower soup I’ll do earlier in the week, maybe even on the weekend and lentil soup later. Lunches for B1 I do not have his preferred foods available. Ooops.
Cauliflower soup sounds yummy. Do you have a recipe?
I don’t! Sorry… sautee onion, deglaze, add cauliflower and a potato, cook till soft, puree adding cheese in stages, keep some chunks if desired.
Oooh, potato and cheese as well. Even better!

husband is making red beans and rice for dinner tonight and it smells amazing i need it now.

Totally blanking on a meal plan this week. I started my sourdough starter tonight and I’m hoping I either find inspiration by tomorrow or just make a normal loaf.
I want:
1 bean dish (have cooked pinto in the freezer or could do garbanzo, black, or red)
1 fish dish
1 crock pot meal
Veggies to use up:
- very ripe bananas
- 1 head cauliflower
- Mini peppers
- Butternut and acorn squash
- Have lots of other veg in the freezer too.
I might have some chicken in the freezer but we have every cut of beef you could imagine. Salmon or tilapia for the fish.
Any thoughts based on these parameters? I might just make @noodle’s butternut squash curry again since that’s such a good recipe!
Since last week did not go according to plan, I still have the ingredients for probably a week’s worth of food. Will try to do:
spaghetti/sausage
a chickpea thing–MAYBE with additional protein if I feel like it, if not husband can deal
chorizo skillet
burritos/bowls with rice, ground beef, beans…
Oh and we have asparagus from the garden that needs to be eaten. Something with that…
I think that will be enough for the week tbh. Will report back if we follow any parts of this plan!

We have some leftovers still but I think I will plan on making another food today so that can be more of a side as a leftover.
It is gonna be BIVALVE SOUP. Its’ such a winner in our household. Not hard to make and really yummy. Introduced to us from @iualia s household. So I need to go to the asian grocery store so I can pick up frozen mussels.

Sunday- salmon cakes, cucumber, avo, cabbage slaw
Monday- steak, roast sweet potato, cucumber salad
Tuesday- dinner out
Wednesday- red lentil curry
Thursday- pasta, red sauce
What’s your salmon cake recipe? I have quite a bit of tinned salmon
My salmon cake recipe is a tin of salmon, some panko (1/3 cupish), 2 tbsp flour, an egg, some mayo, a seasoning blend. I will probably add some corn. I would have green onions too if they were in the fridge
Let it sit in the fridge for 20 minutes or so.
If i have lots of panko I might do an eggwash and crust, or just a crust. But I only have one box atm, so probably won’t.
