You can do potatoes too, mashed, roast, sweet. It is very forgiving. Too wet, add flour, too dey, add mayo

This is the recipe I use! It’s satisfying but tbh the potatoes are hard to get right.
Here are the meals for this week:
- Sticky soy ginger chicken
- Roasted brat and peppers with tater tots
- Curried chickpeas with spinach
- one pot roasted red pepper pasta
- beef and cabbage stir fry
- creamy coconut lentils with spinach
- Frozen pizza night
- baked beef and bean tacos
- mushroom broccoli stir fry noodles
I made a big mistake the other night with the sticky chicken. It is one of the girls’ favorites and I decided to try and cut the brown sugar a bit. I doubled the recipe and I just couldn’t bring myself to use 1/2 cup of brown sugar in the marinade. I only put in a few tbsp. I also didn’t measure the soy sauce and just poured it in. The result was the saltiest, grossest chicken ever
The girls said it was the “world record worst meal we’ve ever had”
They said it was worse than anything DH has ever made.

I guess you and DH are both learning that specific recipes matter sometimes.
I made a big batch of zucchini and white bean orzo for lunch this week and I think it turned out pretty good! I did not actually measure everything exactly but it was forgiving enough to season/add lemon to taste at the end.

We’re making a ‘chickpea parmesan’ dish for beans this week, probably with plain butter noodles on the side so my kid will eat something and a salmon with brown butter over asparagus and peas, polenta on the side.

- Paprika chicken and potatoes (NYT)
No set plan yet, but I did my “top up” shopping today. What I have in stock:
rack pork ribs (unseasoned)
ham steak
beef round thick slices (in freezer)
eye of round roast (multiple meals, in freezer)
And pasta, potatoes, rice, flour, etc.
What we’ve had most recently: chiquales, and I have no tortillas left, so tacos, etc as that are out. I could easily roast the ribs, eat some of them that day then shred/season and make open face Mexican pork “carnitas”
My usual was to make “plumy” ribs but I haven’t been able to find the recipe. Did a google search, wound up with this:
Which I will likely make. AND I think it solves my problem because I’ve been thinking the recipe was from Marion Burros, but I also have Lorna Sass cookbooks, esp. for the instant pot, so, maybe the recipe is NOT lost? Now I just have to make sure DH didn’t eat all the prunes.

Last night we had HM tomato soup and I’d bet DH ate the end of it for lunch.
The garden yielded the smallest amount of tiny Brussel sprouts as I pulled out the plants from last year
MENU:
M - Plum pork ribs, rice, brussel sprouts & other steamed veggies (r/g bell pepper, onion, celery, carrot, frozen peas)
Tu - Grilled cheese sandwich, rice pudding? LO steamed veggies as is or in stock, depends on how they worked.
We had pork tostadas with HM flour tortillas. Pork, veggies, rice, cheese, salsa
W - pork curry, rice or? (depends on how much rice remains) Maybe the grilled cheese above? I got a jar of prefab “cacao y Pepe” sauce out of the pantry, and didn’t use it. I made peach muffins in the morning. We had the last of the tomato soup (thought DH would eat it) and grilled cheese sandwiches Musta done it right, I set off the smoke detector! ![]()
Th - Pasta w/“veggie” sauce or topping (blended end of the steamed veggies or more veggies, sautéed DH had the last muffin for breakfast.
F - Pan Haggerty with bacon (if there’s any cooked left, doubtful, but possible!), peas or other veg.
Sa - LO pan haggerty, if any for breakfast Corn cheese soup
Su - Ham steak with marmalade, veggies
BTW, I LOVE Sass’s Whole grain cookbook. It’s a complete reference. The recipes are too elaborate for me, but the basic cooking info is invaluable!
We learned an important lesson tonight - this cannot be made with gf pasta. The pasta literally melted in the water. It was disgusting. DH is now preheating the oven for frozen pizzas and I put the girls into the bath early. We will eat after the bath tonight and they will probably be up late. ![]()

The Econ family has had enough lessons for the week at least! Hope your next meal is predictable and delicious.
I have never gotten a one pot pasta recipe to turn out in a way that isn’t disgusting mush, and I eat regular pasta.
I usually just ignore the one pan part, add less liquid, cook the pasta separately, and add it in at the end.
I have had this happen. It was like glue. I’m sorry.
