local butcher we have gift cards for (ty shadowy one’s mom!) sent us a 15% off retention coupon that expires tomorrow, so yesterday we got a 5lb boneless pork shoulder.
I’ve put on the Momofuko dry rub for their bo ssam, and I guess we’ll be having that Monday with cucumber, picked carrots, glass noodles, cilantro, ssamjang mayo. Several containers will go into the freezer for later.
Tues - taco coleslaw bowl (cabbage, pulled pork, avocado, tomato, corn, cilantro, pickled red onion, chipotle lime mayo dressing)
Wed - lentil soup?
Thurs - okonomiyaki?
Fri - ???

I don’t have time to cook dinner most nights, so I tend to prep one big batch of something for lunch all week and dinner is either a second batch cook or frozen food from Trader Joe’s…
This week’s meal is from a new Deliciously Ella cookbook - turmeric roasted cauliflower, zucchini, tomato, and chickpeas over quinoa with tahini yogurt and pita. TBD whether it tastes good, but I’m committed for the week, haha.
Dinner is a mix of frozen mac and cheese or cod provencale depending on the night.
EDIT: Phew, lunch is good.
Roast chicken from the deli section, sweet potatoes, broccoli
Pizza tater tot casserole
BBQ pulled pork sandwiches to use up pork loin in freezer
Fried rice (leftover chicken from the roast)
Ravioli and jarred sauce and probably a microwaved vegetable on the side
Chicken pot pie (maybe turkey pot pie, I think there’s ground turkey that needs to be used)
Things on sale this week or last week:
Pasta sauce, ravioli, crescent roll dough, fries/tots

Just saw a picture of something called “gnocchi shepherds pie” anyone ever attempted something like that??
I notice a lot of things called lasagna or shepherd’s pie that maybe are just delicious rebranded casseroles. Please report back.

Last night I took bagged salad kits from TJ’s (I recommend the lemon basil arugula) and portioned them out and added cherry tomatoes.
I also made guac with the avocados I had - which were perfectly ripe!
Today I need to do something with the black beans I cooked in the instant pot. This sounds pretty good but it feels like a lot of work. cuban-style black beans + rice with coconut cream - The Clever Carrot

I don’t typically attach one meal to each day of the week because I don’t know if we’ll be eating leftovers for dinner, if my husband will be home, etc. But I am trying to get us both on board with a list of 3-4 meals for the week that we’d both be OK with in theory.

Following up on this: the Crunchwraps are the only thing on that list we’ve managed to eat this week! I haven’t eaten out, either. Husband keeps working extra late and wanting to either make his own thing or eats at work. So I’ve been having bean dip and it’s delicious.
This is something I’ve been eating a ton of. It’s great for lunch/filling in the gaps for me. It’s very satisfying with chips or on a tostada. (gift link)
It reminds me of this Smitten Kitchen recipe, that I have made exactly once. Her version has many more ingredients. I’d be more likely to make this simpler version and eat it with chips and a big pile of sour cream. And as many pickled jalapeños as I can handle, which is very few but I do like them. Thanks for sharing the link!
