It’s been a while since we had a meal planning thread so here’s a fresh one. What’s for dinner? Or what needs using up that you need ideas for?

Pizza hot dish
Baked ziti
Butternut squash risotto - Slow Cooker Revolution 232 (2-3 hours on high)
Un stuffed chicken cordon bleu - Show Cooker Revolution 93 (2-3 hours low), with baked potatoes
Some sort of stir fry
Burgers

Oh and goulash that’s a roll over meal for this week. And fuck I just got back from the store and I think we don’t have parmesan for the risotto. Sigh. I’ve already been to that parking lot twice today, the first time was a vet visit so I couldn’t really consolidate it all into one trip.

Difficulties in planning around here are Kiddo activities that have us out of the house until right before dinner plus Mr. Meer occasionally having to work late, so I have to plan for two meals a week that can be a slow cooker/simmer or something Mr. Meer can turn on the oven and put the thing in for X time.

Our meal plan this week (we plan Saturday - Friday)

  • Sat - Pork pad thai
  • Sun - monterey chicken skillet
  • Mon - Sweet chili chicken bowls
  • Tues - BBQ Chicken + mac and cheese + brussel sprouts
  • Wed - Spaghetti + meat sauce
  • Thur - Greek Turkey and Rice Skillet
  • Fri - Pizza and Movie Night

Here is ours! I meal plan on Sat am for the week. My child is guaranteed to eat the pasta and meatballs but nothing else.

  • Fruit salad for (friend) house
  • Mon: salmon burgers and dill salad and sautéed kale
  • Tues: quiche and leftover kale
  • Weds: five spice chicken and rice bowls (make all the chicken, freeze a bunch for later) - chicken, rice, lettuce, carrot, cucumber, bean sprouts, cilantro, green onion
  • Thurs: pasta with sauce, meatballs and broccoli
  • Fri: frozen pizza and leftover broccoli

I need to add to my rotation too!
Currently in rota are:

  • Bivalve soup
  • Spinach lasagna
  • Colcannon
  • Stamppot

Soup:

I supplement a fair bit with hotel breakfast buffet leftovers from “too good to go” and get bread from there yoo

Case in point. Just made soup. Bread from too good to go. This is a Bread Forward ™ country.

Oh, a yummy meal I made last week was Tuscan chicken with white beans. It was inspired by this recipe but I did it as a skillet meal plus roasted potatoes and carrots instead of a stew. I just had the leftovers for lunch and it was still good.

I ended up not using all the sun dried tomatoes so the rest will go into the baked ziti this week.

We’ve Got Bowls!!!

This week’s planned foods:

  • Pearl couscous bowl with red grapes and fried halloumi (or mozzarella balls depending on the day), dressed with yogurt + dill
  • Southwest chicken bowls (Spanish rice + black beans + chicken/onion/bell pep marinated in a vaguely Southwest spice mix)

The couscous bowl is for lunch, as it’s full of dairy and therefore not Chickadee friendly. The Southwest bowl is VERY Chickadee oriented, she loves Spanish rice and black beans.

Meals we have ready to go this week!

Shepherd’s pie!!! I made my mum make this for me and ate some last night and some is being microwaved right now. So good. Kids ate some but G did not due to him being anti beyond meat

Precut strawberries/pineapple. Gone. Please send cut fruit on all meal trains

Tandoori paneer and chicken, frozen, oven ready - kids will either eat 1kg each or none. No middle ground.

Chili, cooked and frozen
White bean and kale soup - brought by friend, frozen

Veggie tray, bagged salads

Jarred pasta sauce/pasta (alfredo and red). Kids will eat this

Frozen fake chicken strips, real chicken strips and fish fingers - kids will eat this

It is a different and more expensive meal plan than usual but I am pumped! I also have curried beyond beef and rice that is leftover and might need the freezer.

Thursday: Leftover roast chicken in pasta with broccoli
Friday: Jambalaya
Saturday: Pizza & wings
Sunday: Meatball subs
Monday: Quesadillas

Wednesday: Pork loin and potatoes and broccoli

This is @diapasoun 's recipe and it was so yummy! That balsamic vinegar/blueberry combo. DH says he should’ve cooked down the sauce more, but it was tasty anyways. :drooling_face:

Here you go! From salt acid etc etc. I just make the marinade for whatever cut of chicken I have, I’m not roasting a full chicken this week.

These are planned:
TikTok pasta plus - the roasted block of feta and cherry tomato one, bumped up with chickpeas and artichoke hearts

Crispy gnocchi with Brussels sprouts and white beans

Double protein tostadas with refried beans and taco seasoned tvp crumbles

And then whichever of these are needed to round out after all the leftovers of the planned ones are eaten:

Snack dinner with baguette, marinated goat cheese, apple, Gouda, jam, cornichons, jam, tapenade, mustard, etc etc

Stir fry with tofu and whatever veg we have over either rice or noodles

Cream of mushroom wild rice soup -literally just can of cream of mushroom soup and a can of wild rice heated up together

Freezer guys
