Meals for the week! Wife is solo parenting and under a lot of work pressure so the theme is easy.

I’d like to try something new. Anyone have a “one unit” recipe they like?
One unit as in soup (one bowl) lasagne (one slice) something where the meal is just One Thing.
I cook vegetarian but yes to seafood and fish.
I’m a big fan of chili for One Unit. Also split pea soup, homemade chicken and rice soup… got a creamy fish stew that’s good too.
Also chicken broccoli rice casserole!

Today I will do the tandoori chicken/paneer with salad
Tomorrow chili and pasta
Wednesday soup and maybe oven fries or fish fingers or grilled cheese

I think I missed a day so pizza or ramen or mac and cheese or the lentil soup below.

Oro poro I can give you my lentil-carrot-potato soup, or find you a recipe for Trinidadian corn soup, OR I have always wanted to make/try fish pie which is like shepherd’s pie but fish in white sauce. Maybe I can make with chickpeas? Or you can buy fake meat or lentils and mushrooms and make shepherd’s pie because it is delicious and potato forward.
Quiche / frittata?
This is a favorite, but I generally don’t faff about with a crust

I use Alicia’s pepperpot as my base and her recipes overall are great. She really stepped up to get a lot of recipes written down
It was great, definitely double it, idk why you’d only make half a standard block of tofu anyway
Sheet pan gnocchi with roasted Brussels sprouts and yellow eyed beans, essentially the same as last week but roasted not stovetop and different beans
Refried bean and taco tvp tostadas again
Enchilada style bean and rice burritos
The infamous N’s family mac and cheese for them and leftover TikTok pasta for me
A wild rice and cranberry bean salad that is kicking around in my head, thinking celery, scallions, actual cranberries in a citrus-y dressing? Maybe some super finely shredded cabbage too? Definitely a lot of chewing in this one.
Snack dinner finishing up the fancy little dips and salads I got for the last snack dinner (carrot hummus (spicy with a white bean base), beet and dilll, marinated chèvre), maybe Hetty Lui McKinnon’s broken egg salad

Oh that reminds me of my version of chicken pot pie - vegetables, either a sauce I make or cream of mushroom soup, chicken (can try chickpeas or other protein, I don’t make chicken the star player), but instead of doing a whole crust all around I use canned crescent roll dough over top. All the inner bits are fully cooked in the oven safe pan on the stove top so I just layer the dough on top and cook for the 12-14 minutes the can says which gets it nice and golden, then you’re good to go.
It’s more of a one scoop than one slice, but it’s a yummy mess. I can give a better recipe if you want something more than my hand waving and rambling, lol.

- Whatever potato kugel is leftover after tonight’s seder, currently grating everything for that

- Brats or polish sausage on the grill. I’m thinking polish so we can also do pierogi on the grill

I’m not sure I totally succeeded at following our meal plan so far but we’ve been successfully not eating out for dinner for two weeks now? Maybe 3?
