Don’t usually fuck with a 4⭐️ NYT recipe but we had frozen eggplant to use up
This one was a big hit last night! Everyone in the house ate it! I was just a little grumpy that it had more steps/components than the meals I usually make.
I definitely feel that.
Me: I would love to try new recipes to change things up!
Also me: It has how many steps? Um, no thank you.
Speaking of which, this week is only tried and true favorites:
Sundried tomato pasta
Black beans and sausage and rice
Soft tacos
Roast chicken
French toast and then some format of breakfast potatoes and sausage
Butternut squash risotto
Pizza
This was a fail bc it called for 8 cups of eggplant and I had maybe 2.5, so we did mac n cheese instead. Oh well. I did manage to peel the eggplant chunks before refreezing in a better container. Silver lining!
Oh yum! I’ll have to try that… Pipsqueak actually really likes soup and I think she might eat most of those ingredients! We are just barely at the mixing foods we kike together into one dish stage and this might be right on track!
Good to hear… we have lots of salmon in the freezer and I’d never think to put it in a soup situation.
DH and I devoured it! Ziti loved the broth, her first real soup experience I think?? And it was even a real summer day and we weren’t mad about having a soup for dinner. I’m excited to eat it again

We have been making this granola bar recipe every week and it is SOOO good. Pro tip - don’t overcook the sugar/oil mixture you will turn it into toffee granola bars. I have been subbing the butter with coconut oil for no reason other than we have a lot of coconut oil.
This week:
The aforementioned eggplant dish we didn’t make last week (it was fine. Even after I went thru the comments and adapted, still not a 5⭐️ for me. But it made a lot and we’ll eat it and it was good eggplant exposure for the kids)
Bacon cheeseburger meatballs (with waffle fries and a salad)
Tried and true Spanish tortilla (no recipe)
…and masala chickpeas and tofu
Got back late last night from a week long trip so the meal plan for the next two lunches is leftovers from the large papa john’s pizza I ordered.

What do you do with them for this week and for a few freezer meals?

good point, keeping it simple with a marinara adjacent thing in the oven
== a scant 4 cups of sauce to find space for in the freezer. The sauce is a tomato thyme because we had a bunch of thyme from a 2g2g mystery bag and the basil was only one or two leaves left
(this is when I start thinking about that basement freezer again, but there is a limit to how spendy this year and next should be)
