Meal Planning Mayhem

Sesame chicken noodle bowls
Red beans and rice
Chicken pot pie
Philly cheese steaks
Lemon chicken and mashed potatoes
Goulash

All meat from the freezer and two of the meals are from things we’ve already got on hand so the grocery bill was less crazy than it has been. I’m sure next week will be extra high to balance it out and we’ll run out of a bunch of staples at once somehow.

I made Samin’s CPP last night, the one in Salt, Fat, Acid, Heat. Used 3c of frozen shredded chicken, partially from a rotisserie partially some leftover thigh meat from a different meal. DH made the pie dough for me. He said, “This is perfect. I would not change anything.” It was so good I’m pumped to eat it again for lunch!

Tonight:

Friday:

Saturday we have a wedding. Sunday is Rosh Hashanah dinner with in laws, so brisket lol

I took inventory of the proteins in the freezer and planned out the next 4.5 weeks of meals using what we’ve got in the house. We still need other things for these meals, but we have all of the protein!

Have I posted this recipe before? If so I don’t even care they are so good and easy to make. chewy granola bars that everyone in my house loves. I made a new batch today.

You can veganize it by using coconut oil instead of butter and maple syrup or extra brown sugar instead of honey.

Making crispy chickpeas for this one:

Have made this before and it slaps:

This will use up leftover pot pie ingredients nicely:

The butter chicken and lemon rice is premade from Costco; gonna try it out

I have some frozen quinoa leftovers that I’m trying to use up. Should I try to put some in the Japanese curry or will that be weird

Or maybe the bean dish? Idk. Just looking to add it somewhere we won’t really notice it but also get it out of my freezer

I’d go beans over the curry. I feel like it’ll kindof melt into the beans and you won’t notice as opposed to the curry its texture would stand out more

The current batch cook:

  • Warm barley salad with collards, mushroom, beets, red onion, and lentils, topped with fried paneer and an orange juice vinaigrette
  • Roasted cauliflower
  • Roasted sweet potatoes
  • Tapioca pudding
  • (Plus we have a really nice sourdough + mascarpone + heirloom tomatoes to munch on)

The kale Caesar pasta salad is so fucking good I can forgive myself for dirtying every single dish to make it

Yum! Was this a recipe or just throwing things together?

That does sound really good.
Yeah some recipes should come with a warning: This will take up EVERY DISH you HAVE, none of which go in the dishwasher

It makes sense when you see the recipe—you cook pasta, fry bread crumbs, use food processor or blender for dressing, clean and chop kale. On top of that I decided to roast chickpeas. So really every form of cooking lol

Oh wow yeah. I remember one time I attempted to make a salad nicoise and it had like 25 ingredients. Plus a dish for every single one.

I love tapioca pudding! It reminds me of my grandmother. My cousins and I would go swimming at the pool (yes, the pool, there was only one [it was also the high school pool] in our small town) and then we’d walk ourselves home and Grammy would have a big pot of warm tapioca pudding she had just made, the fancy way with the fluffy egg white bits in it! It was sooooo good and comforting and sastisfying, a big warm bowl of pudding after pool time and walking home and we were starving by then.

I think I’ve only ever had barley in a soup. But I have some in my cabinet and this salad sounds intriguing. Do you have a recipe of is this description pretty much the recipe?

100% throwing things together

The description is pretty much the recipe. Cook everything as you usually would, mix, throw dressing over right before serving.

I fairly regularly make grain salads or grain bowls and I almost always Frankenstein them together.

Tapioca pudding is SO COMFORTING
