Meal Planning Mayhem

Fabulous dump and bake rice meal! I was trying to get it done before the oven was preheated and pretending I was on a cooking show and I won! I also substituted everything  we didn’t have any white beans so I used kidney, added a zucchini, and instead of pesto did sun dried tomatoes and Italian seasoning.

Lol - we go through at least one tub of Aldi nonfat Greek yogurt/week. This is why I prefer the even larger Costco tub!

I have been very neglectful with meal planning the past few months. I was on a mission to keep grocery costs super low and to use up what was in the pantry and freezer, with just small purchases of produce boxes and dairy when needed. I succeeded and we pretty much completely cleaned out the freezer and most of the pantry and now it’s time to get back to meal planning and weekly grocery shopping because I really hate not knowing what I need to make on a given day or not having a staple on hand to make something. Especially since next week school starts again and we are back to judo 2x per week so I don’t have the luxury of just piecing something together after work or making a quick trip to the store for a missing ingredient.

I’m back to my routine of meal planning Thursdays and then doing grocery pickup on Fridays so we get 4x fuel points. This week’s plan:

  • Thur - Jambalaya
  • Fri - Bratwurst + corn on the cob
  • Sat - Pesto Salmon with tomatoes and white beans
  • Sun - HM Pizza
  • Mon - Cilantro Lime Chicken Drumsticks + roasted potatoes + veg
  • Tues - Leftovers
  • Wed - Spaghetti + meat sauce
  • Thur - Leftovers
  • Fri - HM Pizza

Adult lunches prepped on Sun and Wed:

  • Zuppa Toscana
  • Chicken and Lime Soup

D2 lunch if school doesn’t have GF lunches in stock for her yet:

  • tuna and crackers
  • lunch meat, cheese, and crackers

Really? How? I find it so gross!

I’m currently eating fat free Greek vanilla yogurt to which I’ve added frozen blueberries (I nuke them for 30 seconds first) and some granola breakfast cereal. I think it’s yum, but you might not.

Fruit, yogurt, honey and homemade granola is my very favorite breakfast! I have it every other day.

But this morning I had cottage cheese and Aldi coffee cake. Lol

We also go through a costco sized plain greek yogurt per week! We heat up frozen berries in the microwave and then put the yogurt on top and mix it all up. Sometimes add granola or cereal on top.

And of course using it for cooking and baking too. Adding it to muffins adds protein!

I use about 1/2 gallon of homemade per week if I am being consistent. By myself! :joy:

With frozen fruit (or fresh if in season) with a little honey/maple and maybe granola if I make it (allergies).

Smoothie with milk, yogurt, fruit, chia seeds, flaxseed meal, unflavored unsweetened protein powder if I have it, and a little honey or maple depending on the fruit sweetness.

TZATZIKI (enough said)

Dressings (or other dips), sometimes in the place of sour cream if I don’t don’t have any (like for ranch)

Lebneh with garlic and herbs, or something close to it, basically akin to spreadable cream cheese

I use it in place of sour cream to top tacos and chili, sometimes I put some into smoothies but it’s SO SOUR and I’m trying not to add sweetener to smoothies. Fortunately the bananas that came off of my tree are VERY sweet so that helps. I stirred protein powder into it once and that was about the most disgusting thing I’d put in my mouth for a while.

Boyfriend will absolutely not eat it at all. So it’s just me trying to get thru it. I really should just stick to the little containers of it at TJ’s - less waste.

I have been craving a good chia pudding and I nailed it!

1 can full fat coconut milk shaken really well (only works because it’s summer but you need to whisk it if your house is cold), 1/2 cup chia seeds, splash of vanilla, splash of maple syrup.

I added coconut flakes, yogurt, and blueberries on top and I’m in heaven.

You know, I have never had chia pudding. Is it like tapioca?

It’s not quite like tapioca. Tapioca has a chewy/bouncy texture that you need to chew. The chia seeds are about 1/4 the size or smaller of the tapioca balls and the whole thing is the same consistency.

I’m trying to figure out the perfect way to describe it. The chia seeds get slimy but in a good way, which is a weird thing to say because usually slimy is gross.

It might be most similar to overnight oats if you have ever made them?

Soup, daal and veggie burgers have been requested so we have a lot of options

Thanks for trying to explain it. And nope, I’ve never had overnight oats either!

We made this salmon dish with hm pesto and it was FABULOUS. Easy clean up too. Salmon came out perfectly which is rare for me, I’m always overcooking it and then not enjoying it. Thank you for the rec!!!

I feel like we should do fried rice at least once a week. It is the ultimate “clean out the fridge” meal and stuffed with veggies. Throw some eggs in it to bind it together and up the protein and boom dinner is made so fast.

I had edamame in the freezer that I bought a long time ago for some reason. Decided to try this because it’s high protein. It is… meh.

On the plus side it should be easy enough to spice up. I’m going to let it sit overnight to see if the flavor improves. Also, I did not have any scallions but I added some garlic and that did help.

What do other folks like to do with edamame? I do not like to eat them plain. I tossed some into a stir fry too and that was OK. But I get bored of stir fries.

I eat them in a Tex-Mex bowl mixed with rice and beans and corn and tomato and green onions. Or a plain Japanese inspired rice bowl with wasabi and cucumber and sesame oil and soy and avocado, topped with an egg - generally sticky sushi rice is best for this.

Breakfast burritos ready for the freezer! The souper cubes make this so easy.
