I just had a really nice day.
I downloaded AirBnB and am going to sign up so that we can go on a holiday.
I am in Mexico and will have tacos for lunch.
I’ve done my shoulder rehab 2 days in a row! Will it continue? Let’s find out.
But seriously, the stretching seems to be helping with my range of motion and pain while the exercises are getting back some of my joint stability.
I have some energy, and caught up on laundry. Including some new items- those sometimes take me a shamefully long time to get tags off and get them in the laundry!
I was awake too early this morning, didn’t have time to bother falling back asleep, did have quite enough time to get all the way through an episode of tv … so, thanks to YouTube, I started off my day with yoga.
Fuck the heat wave, I think I will bake today! Pumpkin bread (so much pumpkin in the freezer).
Ooh, that reminds me. I need to make the pumpkin beer for this fall soon. Imperial maple nut pumpkin beer on nitro. This will be my greatest victory yet. I mean, maybe not the greatest, but hey. Beer.
I can ship you LOTS of homemade pumpkin purée! Just roasted pumpkin, nothing else.
I like yr style, Gdogg.
Also, favorite pumpkin bread recipes?
Favorite from Once Upon A Chef (I double the spices except for cloves. ETA: and I add powdered ginger, and sometime allspice and cardamom- it’s in the oven now)):
Pumpkin bread
2nd favorite: Chocolate-Orange Pumpkin Bread
8 tablespoons (115 grams or 1 stick) unsalted butter, melted and cooled
1 1/2 cups (195 grams) all-purpose flour
1 1/4 teaspoons baking powder
3/4 teaspoon kosher salt
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup (200 grams) granulated sugar
1 teaspoon finely grated orange zest
1 1/2 teaspoons vanilla extract
3 large eggs, at room temperature
1 scant cup (215 grams) pure pumpkin, see our homemade pumpkin puree recipe
3 ounces (85 grams) chocolate, roughly chopped or chocolate chips (about 1/2 cup)
DIRECTIONS
Heat the oven to 325 degrees F. Grease an 8 1/2-inch by 4 1/2-inch loaf pan. You can also line the bottom and two sides with parchment paper. If you leave an inch or two hanging over two sides, it makes for easy removal after baking.
In a medium bowl, whisk the flour, baking powder, salt, cinnamon, ginger and cloves to combine.
In a large bowl, rub the sugar, orange zest, and vanilla together until fragrant then add the butter and whisk to combine. Add the eggs, one at a time, whisking well after each egg. Stir in the pumpkin.
Switch to a spatula or large spoon then fold the flour mixture into the pumpkin mixture in two parts, folding just until combined. Be careful not to over mix the batter. Fold in most of the chocolate, leaving about a tablespoon to scatter on top.
Spoon the batter into the prepared loaf pan, smooth the top then scatter reserved chocolate on top. Bake until the loaf is golden brown, pulls slightly away from the edges of the pan, and a toothpick inserted into the center comes out with just a few moist crumbs, 55 to 75 minutes.
Cool the loaf in the pan for 15 minutes, then remove from the pan and transfer to a cooling rack and cool completely. Store loaf loosely covered at room temperature 2 to 3 days or wrap well and store in the refrigerator up to a week.
Thank you, these look awesome!
Tony Victor: have acquired new pumpkin bread recipes.
You can bake them as muffins too. I didn’t think I would like the chocolate orange pumpkin bread (though I love chocolate and orange together), but I was pleasantly surprised.
I know where you could get some pumpkin purée… seriously, I probably have 20 cups in the freezer.
I am not yet melted!!
I stole Kid-4’s car and got an oil and air filter change before she even woke up.
I went to the doctor and called another doctor and have all kinds of ultrasounds and doctors scheduled. Only one more doctor to round up.
I got an email from a friend in rehab who hasn’t been able to talk to people outside of rehab for months. He’s doing well! I am relieved and SO happy to hear from him.
After that rough start I have had a great day. Tacos and delightful fruit vendors and a gorgeous apartment to stay in and paletas and so much more. Coming here was an excellent choice.
Is this the friend that you worked with in the Boston shop? Glad that they are doing well - it’s a very hard path to recovery.
Yep! He is in a 6-month rehab center in West Virginia and wasn’t allowed to have contact with any non-family members until now.
