What to do with ~3 quarts of whey? I made paneer from a gallon of milk and this is what’s left.

I’ve made whey biscuits in the past, but I can only eat so many biscuits and it doesn’t even use that much whey.

a soup that uses buttermilk? buttermilk chicken marinade (I used to do a Greek-inspired yogurt marinade)?

I had a small pork shoulder bone left over from my birthday dinner, so I made some lentils today and dropped it in along with the standard bay leaf. Now I have about 3 cups of salty, porky, lentily water. Generally I use pork stock in noodle soup bowls, but I’m wondering if there is something else I should consider (especially since the shadowy one isn’t a fan of lentils).

Freeze in one-cup amounts and use in smoothies or, as said above, in place of buttermilk.

I made a giant cottage pie! It might be my best ever. Usually I pipe the mashed potatoes on but this time I went rustic. I knocked the filling out of the park by starting with a puree of garlic and onion and sautéing that, then adding red wine vinegar, then stock, and pre cooking the veg. When I combined with the meat (also pre-cooked and drained) it was a tad dry so I grabbed the last of my homemade bbq sauce (about 1 cup worth) and added that in and HOLY CRAP 100% I will do that next time. I also added spices. It’s unbelievable and there is enough for like 15 servings.

So I made this plan to cook 52 new recipes this year, but I’ve been really stressed/overwhelmed lately so I’ve been reverting back to old favorites instead because they are comforting.

Tonight I made my mom’s jambalaya and my favorite banana bread. It was SO good. Also the lighting in my house is apparently terrible, but it tastes better than it looks!

I have no idea where I got this idea from (my brain says it’s a mishmash of a canadianized gado-gado salad with ditto bahn-mi), but it was delicious last night

  • shaved carrot and glass noodles in peanut sauce
  • pulled pork (could substitute tofu or egg and it would be good too)
  • chopped fresh tomatoes
  • sriracha, mayo
  • pickled red onions
  • crispy fried onions from a jar

and now to make some ginger-carrot red lentil soup to use up that lentily pork brothy liquid I had after dropping some bones in with the green lentils the other week.

Is anyone up for brainstorming smoothie recipes with me? I’m meal planning on the way home from a trip.

What would you add to a smoothie with Ripple (non dairy milk made with pea protein) + frozen blueberries, other than nut butters? Ideally something that wouldn’t make it super sweet. Do we get protein powder? I’m looking for a filling afternoon snack.

Avocado! Avocado AND protein powder? Also ground flaxseed, chia, or hemp hearts.

I’ve added oats in the past, but that depends on how you feel about the texture when they’re blended.

Blanching spinach and tossing it in the blender can add some fiber. I find with my cheapo blender, the blanching is necessary to not get chunks.

Do additions need to be dairy free? I like to add greek yogurt or cottage cheese to smoothies…

Also, chia seeds or hemp seeds. Sometimes collagen powder, or a plant based protein powder. Avocado is good too!

Oh hayyyy. I bought a ninja smoothie blender several months ago and lost my mind over delicious smoothies. I don’t do any type of milk and don’t like super sweet smoothies. I add strawberry protein powder, greek yogurt, banana, or oats to make smoothies more filling but tbh they are never as filling to me as eating the equivalent calories.

^That’s actually not super sweet, IMO it’s like the least sweet protein powder.

Thank you for the smoothie ideas, friends! I bought a bunch of things to experiment with and will give you updates once I’ve tried them.

I’m back from a vacation and shared my meal plan + recipe list with the friends I was traveling with, and I wanted to share it here too in case anyone wanted an already done meal plan. I eat meat, dairy, and soy, and was shooting for anti-inflammatory foods. Even if it’s not helpful, it’s kind of fun to see how other people eat?

Long-ass meal plan and shopping list

Meals + Recipes

Breakfast

  • Peanut butter toast, green juice, and bone broth

Lunch

  • Big salad with chicken
    • Chicken: marinate using some of the salad dressing and then bake
    • Salad: add whatever veggies sound good from the shopping list, plus edamame
  • Dinner leftovers!

Snacks

Dinner #1

  • Salmon, roasted broccoli, and brown rice
    • Salmon: bake/cook in air fryer, put lemon and herbs on top afterwards
    • Roasted broccoli: bake/cook in air fryer, put lemon juice/olive oil/salt and pepper afterwards

Dinner #2

  • Kimchi farro porridge with eggs (use brown rice instead of farro if you want to keep it simple, and just add fried or soft-boiled eggs and kimchi)
    • For recipe base, minus how to prep the farro: Alt-Grain Porridge with Kimchi and Jammy Eggs Recipe | Bon Appétit
    • Farro specific porridge directions (different from Bon Appetit link):
      • Place the farro in a high-powered blender, such as a Vitamix, or alternatively a high-powered food processor and process until mostly ground. You want the grains to be roughly ground with very small pieces of farro still visible. Set aside.
      • In a small saucepan, bring the water and salt to a rolling boil. Slowly pour in the farro, whisking continuously with your other hand to prevent any lumps from forming. Reduce the heat to low, and continue to cook the farro, whisking continously, for another 10 to 12 minutes, or until the mixture has thickened substantially and it is completely cooked.
  • Miso soup with tofu
    • Make miso soup base according to instructions, and add green onions, mushrooms and tofu

Today, I have my first ever corned beef brisket going on the stovetop. It smells good! I don’t usually go for roasts but my husband loves them (and they were on sale at Aldi…shhhh…) so I figured I’d go for it. It’s simmering away and I have laundry going but I need some sides for the roast, I’m thinking cauliflower for veg and maybe something bread-y but fast and easy/not super messy? Biscuits maybe? Or another carb like…idk, rice? LMK if you have ideas for the cauliflower or alternate sides. I also have potatoes, but lunch is drumsticks and potato salad so I think I’ll save those for later. I also have a sack of sweet potatoes and celery and garden salad in terms of fresh veg.

Do you folks have Yorkshire puddings? I would personally say they are the ultimate bread-ish roast side.

Thank you all! I will save these ideas for next time since I ended up going with my quick tried-and-true biscuits. @Rhubarbsoda I’m not sure what I want to do with the cauliflower! I think maybe super spicy sauce after air fryer?
