I think I’m done with my meal planning. Looking forward to a grocery date tonight or tomorrow (also going to hit some thrift stores to search for cookware)!

Breakfast- TVP Hashbrown Fritatta/Egg, Avocado,Tomato

Lunch- Cajun Sausage and Rice Skillet (double or triple recipe)+ Sour Cream

Dinner #1 - Meat (ribs maybe? check sales) + Seasonal Roasted Vegetables

Dinner #2- Black Bean + Sweet Potato Enchiladas

Dinner #3- Arancini (beef filled) + Marinara

Other- Fruit Protein Smoothies, Instant Noodles, PB+J, Fruit, Popcorn, Candy, Crackers

We are having ribs on Sunday and I’m so looking forward to it! That’ll be our “valentines dinner.”

Oh nice! Maybe I’ll do that too! Husband planned a dinner date out for us but for the following weekend since I have Opinions about prix fixe valentine’s menus (I’m anti). But it would be fun to do something a little special on the actual day too! And ribs always feel like a celebration to me.

Great idea! Our butchers was advertising red wine & garlic steaks… I think I know what’s on the menu for Monday.

Saturday L: salami cheese sandwiches
Saturday D: onion soup with cheese curds, gruyere, toast (egg roll inna bowl with chicken, cabbage, carrot, green onions)

Sunday L: candied salmon, green beans, corn, roasted bell pepper, cheese curds, lime juice, cilantro, picked red onion
Sunday D: pulled chicken, grated carrot, cabbage, scrambled egg (with egg white), peanut sauce, pickled ginger, cilantro (refried bean quesadillas with feta, sour cream, tomatillo salsa)

Monday L: braised beef curry, green beans, toast
Monday D: refried bean quesadillas with feta, sour cream, tomatillo salsa (french onion soup with gruyere toasts)

Tuesday L: green beans, buffalo mozzarella, egg, fried capers, toast, tahini dressing
Tuesday D: zucchini-corn salmon cakes, cilantro sour cream, tomatillo salsa

Wednesday L: roast sweet potato, lentils, mozzarella, zatar
Wednesday:

Thursday: roast pork shoulder momofuku bo ssam style (ginger scallion sauce, boston lettuce, cilantro, pickled red onion, carrots, rice noodles)

Made a sheet pan bake with olives, tomatoes, sausages. It needed another veg to round it out. What other vegetable would you add?

I have a huge bag of carrots, and I’m thinking that instead of making cupcakes (because the shadowy one prefers the cranberry cream cheese ones) that I’ll make Carrot Cake Oatmeal Breakfast Recipe this week instead. Maybe a dollop of sweetened sour cream on top?

We were lucky enough to snag some 50% off candied salmon and buffalo mozzarella, so something in this week’s menu is going to shift.

I made riiiiiiiibs. And some potatoes and sprouts. Thank you Aldi for the sale on ribs, haha! Best of all, I bought two, so I have another one on deck in the fridge.

Dry rub!


I bake it without the bbq sauce on until the last 30-50 minutes. I make a homemade KC style sauce.


Sauted in my new pan with oil and then a dash of mirin, makes them so savory sweet.


Potatoes! The best way to make crispy potatoes is to cut them in half, coat in oil, and put on a baking sheet with the rack on the very bottom of your oven at 350. So. Good.

today’s dinner of glass noodles with pulled chicken, grated carrot, cabbage, random egg white, peanut sauce, pickled ginger felt like a free meal.

The chicken was pulled from a couple of carcasses while making stock (generally I buy whole chickens, cut into pieces and keep the carcasses for later stock making, but don’t make an effort to retrieve the last bit of meat during the simmering)
The grated carrot was leftover from oatmeal this morning
The cabbage was the tail end
The egg white was leftover from a yolk pasta sauce a few lunches ago
The peanut sauce was made to use up something else, can’t recall what - been in the fridge a while
The pickled ginger jar was down to just a few whispy shreds

So basically everything was scrounged except the glass noodles and the green onion on top.

I am eating this oatmeal right now and it’s great. You’d honestly never know there were carrots in there?

I’m quite happy with the sweetened sour cream. I guess because has more tang and thicker consistency than yogurt.

I’d love to try that next time! Do you use a recipe, or just wing it?

I just winged it - dollop of cream cheese and some maple syrup on top. that was the only sweetener I used
