Recipes and food ideas

I have a lot of pickling cucumbers and I don’t love pickles (plus I don’t have dill). Ideas?

I also love soaking some seaweed (wakame usually IIRC) and adding it in for a seaweed/cucumber salad.

There are also some delicious creamy cucumber salads that use sour cream.

Anyone have a good recipe for one very large eggplant offhand? Preferably just a simple method with regular pantry staples.

Not super simple, but eggplant Parmesan? Or baba ganoush? If you have stuff for lasagna dishes or hummus respectively, you’ve for the ingredients for them.

Otherwise adding it it stir fry is an easy way to use it up!

How long is tahini good once it’s been opened? And how can you tell if it’s gone off?

I want to make hummus again, but I don’t want to buy another giant jar of tahini if I don’t have to.

As far as I’m concerned forever :joy: just taste it and see if it’s got that funky oil flavor when they oxidize.

Oh but also try making hummus without it once and see what you think- I actually don’t miss it much. With how expensive it is, I usually skip.

I keep tahini in the fridge. I’ve never had it go off. I anticipate it would smell rancid if it was gone.

A local grocery store is doing a case sale for eggplant. What would one do with eggplant that would make sense to can or put into the freezer?

If I were buying a case of eggplant, I would make breaded/fried eggplant slices and freeze them for later. Also maybe make some eggplant parmesan type freezer meals for lazy weeks of food prep. Also roast and make eggplant caponata, which is SO good on many things. etc etc. I grew up in an eggplant loving household haha
