In the heat wave times (and also the being under the weather and having zero energy times) I have stumbled upon a new default easy healthy meal.


Some microwaved sticky rice, a fillet of hot smoked salmon (this one is sweet chilli, half a grated carrot, some frozen edamame beans, chopped cucumber and a drizzle of storebought terikayi sauce and I have a poke bowl! It’s super tasty, I’ve eaten this 5 days out of the last week. I’ve varied the veg with red cabbage and sweetcorn as well when that’s what I’ve had, and added guacamole.

I am always looking for scrap recipes. THANK YOU! I didn’t have anything, except drying strawberry leaves for tea, for the tops.

Monday - early takeout taco dinner, walk along boardwalk before the true heat sets in
Tuesday - leftovers beef shank, ricotta ravioli (walk back through new park after gym? tbd it might be thunder)
Wednesday - leftover miso chicken, glass noodles, bell pepper (early bike ride to the big park? less likely to see charismatic animals, but also, weather)
Thursday - blood orange tomato burrata salad, leftover steak

Last week:
Spaghetti and meatballs
Stromboli with ham and sliced meatball
Beef soft tacos (using up leftovers/freezer stuff)
Sweet and sour stir fry
French toast casserole from freezer
Breakfast sandwiches
Grilled cheese and fries

This week:
Ravioli and fire roasted peppers
Pulled chicken
Pasta salad plus stuff to grill at a friend’s house
Lemon garlic chicken and baby potatoes
One pan Thai peanut chicken
Beef and broccoli

On the solstice, we had a giant cookout at our place, for which I bought way too fucking much stuff.

We are now finally eating the last of the cookout leftovers this week:

  • Hamburgers turned into “taco beef”, used in nachos and nacho salads (using up leftover tomato, romaine, pickled onion, pickled jalapeno, and tortilla chips!)
  • Brats turned into country potatoes (using up leftover brats and onions)

Phew. Our fridge almost looks normal again.

Leftovers or pasta and jar sauce
Rice noodle bowls with tofu and boiled eggs
Burgers (frozen)
If I can bring the barbecue to life, tandoori chicken legs/tofu option, grilled corn, asparagus, potato salad (bean salad if I am not feeling tofu
Pasta and jar sauce and TVP and mushrooms
Rhubarb crumble or trifle or pie
Watermelon

All cooking will be courtesy of the most stimulating TV I can find

what type of ice box cake. my dad’s bday cake is an icebox cake, and since you can’t get the chocolate wafer cookies any more, my sister has to bake the cookies from scratch and then do the whipping cream, which makes it an extraordinary effort.

It should have been refrigerated but the recipe had us freeze it. 20 min does not thaw yogurt. Still good though! And a healthy kid meal.

All my meals lately have been really… boring isn’t the right word really. Joyless, maybe?
Nothing that I actually want to eat.

And OBVIOUSLY not every single meal needs to be some epic party in my mouth but is it too much to ask to occasionally cook a meal that tastes good?

I am not totally sure what the blocker is here other than, I quit buying spices from anywhere except Aldi because they are like $1. And maybe it turns out you get what you pay for. I’m thinking about placing a Penzeys order for the spices of theirs that I really like. Unique stuff like Chili 9000 and Sunny Paris. I haven’t been doing this because I am trying to save money but maybe it would help.

I am also always in a rush and cutting corners to get a meal thrown together as quickly as possible. Sometimes I leave out nonessential ingredients if aldi doesn’t carry them or if they are expensive. So I suppose it is no wonder!

And I think I lack proper tools. Like, our knives suck, our frying pans are flaking and are a nightmare to clean, our cuisinart food processor died and I replaced it with a cheap one that only holds 1 cup. Maybe that is another place to start. Slowly replace tools that are old and do not work well.

Anyway! What is a vegetarian meal you have cooked recently that tasted really good and wasn’t too complicated?

I hear ya. We call these “emotionally satisfying” meals. I think you need some good spices! And penzeys has the best salt free stuff right??

Ohhh, you know what I need to make is avocado/corn/tomato salad. I forgot how good that is when it’s hot out.

Exactly! That is a really good way of putting it.

ETA: like, sometimes food is just fuel and that is fine but maybe sometimes it could also be enjoyable? Because right now every meal feels like “sigh, my body needs me to feed this to it.”

I wonder how the Spanish one would be with cannellini beans? I have a stupidly large quantity of them in my pantry.

those should work very well. I think of cannellini beans as being softer than chickpeas, and I think that would go well with this dish

definitely make that Penzeys order too. We have a couple of good resources for straight spices, but I miss the Penzey mixes
