have you considered oatmeal energy balls? I made some peanut butter ones that I think didn’t need any heating as part of the prep, and a couple could be in a container overnight so they aren’t too cold in the morning
Iced tea report back! I did celestial seasoning peach tea, I liked it and my mom said she did too. I would make it again.

I’ve made “strawberry top water” or “mommy’s crunchy water” as it’s lovingly called in my house where I take the tops of the strawberries, put them in a pitcher with water, let it sit in the fridge for a few hours to overnight and it makes delicious strawberry flavored water that is pink. 12/10.
Quiche and egg bites could be eaten medium temperature. But you’d have to bake them first, so those are my ideas for when you can use an oven again to prep.
Including the green leaves?
Yes! Just the tops and all. I strain it out so you don’t get them in the water.
I’ve done very little meal planning these past few months, and I need to dip my toe back in. We are going to Aldi tonight for a stockup.
Ideas:
- taco salad with the impossible ground beef that is in the freezer
- tofu/mushroom/pepper stir fry. Maybe with the remains of the green curry paste? Must make soon before mushrooms are dead.
- brown rice pasta with tofu spaghetti sauce
- ratatouille - I grew an eggplant and this is my preferred use for it because I have a hard time cooking eggplant well but this generally turns out ok.
- Pre-make something breakfasty. Maybe I just do a shitload of protein pancakes ahead, or an egg bake with veg.

Taco salad is a great idea, we have some dribs and drabs of taco leftovers from the other night and a bunch of lettuce that needs to be used up so I’ll try to remember to do that for lunch today. Thanks for the inspiration!
A big past meal prep win!
We got home late last night with a grocery delivery that arrived within 15 mins of being home.
Then unpacked Nr. Ninja’s lunch fully from the freezer with a Lego meal (rice, beans, chipotle peach chuck roast so a burrito bowl).
I love when the freezer stash gets used so perfectly. And grocery delivery is the greatest when getting home from a trip!
O_O THESE ARE AS SATISFYING TO LOOK AT AS THEY ARE BAFFLING.
Really going hard in the NYT Cooking paint this week:
Tonight is a family Sox game (the weather is truly incredible) so we will eat there
Wednesday we’re having a TJs spatchocked herby chicken with veggies and rice
Friday is a date night so TBD how or when dinner happens!
I am once again drowning in veggies (the new CSA I had to switch to said it was a small share but it’s every week and it feels like A Lot compared to my old every other week share), so I just sauteed a pile of zucchini, broccoli, and kale, dumped in two cans of lentils (Trader Joe’s canned lentils have changed my meal prep life), seasoned with salt, pepper, turmeric, paprika, lemon, and olive oil, and divided over some brown rice.
I also sauteed the rhubarb that was on its last leg with some maple syrup and added it to some greek yogurts with granola to put on top each day.
And to use up my mountain of strawberries I prepped overnight oats so I can add strawberries and molasses in the morning.
Recipe? What’s that? I miss recipes haha
All of this sounds delicious but especially the rhubarb
