If you’re doing a salty ground meat like beyond beef, add shredded carrot while cooking to stretch it. The flavour and texture are good enough. Generally shredding carrot and adding handfuls on things helps me use it in things like rice bowls.

It goes well in bean burgers but I haven’t done it recently enough to have a recipe)

You said no soup or else I’d share mine - it is so fast that little heat happens so I do it in summer.

In cold noodle salad (julienned is best but I chop or grate)

With peanut sauce dip (peanut butter, hot water, soy sauce, nutritional yeast, sriracha)

Muffins/loaf/bread

In coleslaw

I’m a fan of carrots glazed in marmalade, where ‘glazed’ might be overstating the matter a little. It’s literally boiling the carrots and then while they’re hot dumping them in with some orange marmalade mixed with lemon juice and a little nutmeg and giving the whole thing a stir. Good both warm and cold.

I love them super slow roasted with a smoky marinade and then shaved on bagels like lox.

ETA also just a shout out to cut up veggies and dip. Having a Tupperware of cut up carrots, celery, and broccoli and a thing of ranch dip around all the time has drastically increased the amount of veggies we eat and we are vegetarians who eat a lot of veggies. (Obviously you know about carrot sticks, but the ease of just having them cut up and ready and not having to decide to cut them up when things are busy and I cant muster the brain power to figure out what to make has been so nice.)

I’m obsessed with this. This is an uncanny dupe recipe for Toby’s tofu pate, especially if you can get your hands on good fresh tofu. A good substitute for egg salad in this time of expensive eggs!

have: toaster (the vertical kind, not a toaster oven), instant pot, microwave, thermos bag from trader joes
lack: fridge, stove, oven
backup: money to buy a mini fridge or bbq or toaster oven if we decide this is stupid, transit to parent’s house 2 hours away, restaurants

ideally lower carb (no rice, pasta, quinoa, standard couscous)

ideas thus far:
cabbage, peppers, green onion, cilantro, peanut sauce, pre-cooked protein
tuna wraps and carrot sticks
pearl couscous, tomato, pre-cooked protein, cucumber, almonds
glass noodles, cabbage, zucchini, cabbage, nuoc cham
prepared soup
overnight oats

other thoughts?

I love making pearl couscous salads. My favorite is fried halloumi, halved grapes, dill, and a yogurt dressing.

I am now the new proud owner of 65# of dried beans!!

I saw a recipe for pinto bean and apple sauce muffins. Also bean and chocolate fudge muffins. Stay tuned as we try these and report on how they taste.

I have a feeling this will either be good or completely awful lol

This was the recipe and honestly they are so good!! Tastes like a “healthy” muffin instead of like a Costco muffin (that is more like cake lol).

Next time my only change would be to add apple chunks since my apple sauce was smooth. You can’t taste the beans.

What I gather from these is it’d be best with a fatty dressing or topping to cut the bitterness! Or lean in and pair bitter with bitter
