This is probably not anything amazing, but I have decided that Friday nights are pasta nights. Last Friday, I made spaghetti and meatballs (the meatballs being made by a company who puts them in a bag and sells them to me frozen). I do make the sauce but barely. I just cook canned tomato sauce with half an onion, pull out the onion and add in butter and salt (it’s kind of Marcella Hazan’s recipe). So it’s super simple/easy for me to do on a Friday night but it’s delicious and just the kind of comfort everyone is ready for by Friday night. So, I decided I’ll just plan to do a pasta every Friday night. But always a simple one because I’m tired by Friday night, too.

This Friday, I’m going to make lemon linguine. Nigella’s recipe, because you can never go wrong with Nigella.

And then I decided I’m going to make a soup every Monday. Because I love soup, and soup is comforting and we need comfort on a Monday, too, and if I make it on a Monday then there are probably leftovers for lunches during the workweek. First up, I’m going to make a simple lentil soup. My family has never gotten excited about lentils but I keep trying. I think split red lentils might go over better than the usual greenish ones. And this soup is simple but something about it just really appeals to me.

I frequently plan out a menu for the week, at least the meals I’m responsible for, but I’ve never had a schedule. This pasta on Fridays/soup on Mondays plan is the closest I’ve ever come to having a rotation. I’m a variety person so I’ve always chafed at too many repeats. But this plan is sounding comforting to me right now, so I’m going with it. I’m also thinking I’ll try to bake something on soup nights, like biscuits or rolls. Depending on my energy levels, it might be from scratch or it might be from a can. We’ll see!

I like this plan. Just enough structure to the week that you have a good foundation for where to start, but broad enough categories that you get variety! Here are some of my random favorites in each category in case you’d like ideas!

Pasta:

Deb’s broccoli sausage bake. Bonus—it reheats amazingly for work lunches!

Soup:

Alison Roman’s The Stew. Went viral for a reason! We usually serve it with naan.

Yum! I’m ready for some fall flavors now.

Oh wait pasta :joy: So my brain sort of worked on this one. We also recently did a taco pasta recipe from her that we really enjoyed, but then I remembered the lemon chicken one and was like oh I enjoyed that even more, not remembering that it was rice and not pasta. :rofl:

What are people meal planning these days? I’m on like the fourth or fifth week of feeling very ugh about meal planning and nothing sounds good.

Here’s what I’ve done recently, in case it helps spark ideas for other people:

Sweedish meatballs
Tortellini soup
Marinated pork tenderloin, mashed sweet potatoes
Leftover pork goes into wraps with spinach and avocado
Chicken nachos (use up the rest of the avocado)
Fried rice
Roast veg baked ziti
Chili
Pizza-dillas (quesadillas with shredded mozzarella and fire roasted tomato pesto, highly recommend. Honestly if you find fire roasted tomato pesto just put it on everything)
Black beans and yellow rice

From the sale flyer - is this really made from plants? I mean, really? I’ve seen the movie, I know what’s up. This does not help argue against us being in the darkest timeline.

This week I have eaten: toast, baked beans, quorn, sandwich meal deals, a spanish style tortilla or frittata (the fat onion and potato kind), beans on chips, mushrooms and fake bacon. One night pasta, jarred sauce and broccoli
