I made Hongshao Dofu for lunch this week (doubled the recipe, we’ll see how far it takes us). I haven’t tried this recipe before and my feeling is: it’s ok. It’s good if you want something very take-out like, maybe with the exception of the shiitake mushrooms. It’s not spicy at all and it’s sweet but that’s helped by the vegetables, which aren’t cooked for long. It’s pretty light overall. I was just in the mood for something more spicy and complex, I think, but husband really likes it! I also made some beef and rice to round it out.

This was made for me. I could and probably would eat lentils every single day for lunch if I was single/living alone. I’m going to make this over the weekend! Will report back.

I have been gifted some chocolate tahini. I could make chocolate hummus… or just eat it… but I’m intrigued by the suggestion on the jar of putting it in baked goods. What could I make with chocolate tahini?

dollop into brownies and do a marble swirl? swirl into a cheesecake or coffee cake (or coffee cheesecake square thing)? drop into the center of a muffin or cupcake?

Has anything made something similar to this? I am intrigued, and have a bunch of home-canned peaches to use up. In honey syrup though, so I dunno if this would come out too sweet. Maybe if I drained the syrup?

I also don’t have paneer but maybe fried tofu instead?

Not that recipe or specifically in the instant pot but I’ve done plenty of stovetop curries. I would definitely not use the syrup in your peaches. I’d strain and rinse them or it will be super sweet. I would also cook the tofu separately and add it in at the end. I see tofu as a sub for paneer a lot and IMO they are not similar at all beyond appearance; tofu is far more delicate and has a totally different texture and cooks so differently, and I think cooking long enough to make a curry could break it down a lot.

I see she says instant pot is a 1 minute cooking time and stovetop is a 5 minutes cooking time and…I call bs on that. Haha. I mean I’m sure it would be edible and fine, but it’s just not possible to develop layered flavors that quickly, even if you pre-toast them. If I were you I’d use the pureed peaches in a coconut milk curry and up the cooking time to at least 30 minutes stovetop. IDK what that translates to in instant pot.
