I’m totally in a food rut and bored with all my usual recipes. What is the tastiest vegetarian main dish, ideally that doesn’t contain white carbs and is reasonably healthy, that you’ve recently made?

A main stay favorite in my life.

Brown rice gets around the white car problem fairly well. Recently I’ve made groundnut stew with brown rice, and I think tonight I’m making a masaman curry. I’ll probably use chicken this time, but I’ve often done it with tofu as well.

Got a good recipe for masaman curry? I do curries often but not that particular one.

We have eggs now! I could make fried rice… except I like to put mushrooms and/or tofu in it and have neither. Hm. Maybe next week after next grocery delivery.

Ohhhh. Grilling cheese. They give samples of that at the farmer’s market. Hm, I have no idea where else to find it, and obviously since it is currently the frozen abyss, no farmer’s markets. Noted for whenever I find a source - that stuff is soooooo good and it never occurred to me to, like, put it in a recipe instead of just eating it by itself.

Is “grilling cheese” the same as halloumi? That’s the cheese I regularly grill, so maybe? Halloumi is available at my Trader Joes, though I recall that is not helpful for you.

Sure, I cheat! Maesri curry paste - I keep Prik Khing, red, and masaman on hand (I have to order online and usually just go with Amazon).

This recipe is a crock pot one, but you could just let it simmer a while on the stove. I do it in the Instantpot most of the time these days, and for that, I add the vegetables after most or all of the pressure cooking is done (when I’m using chicken; for tofu I just use the slow cooker setting).

  • One can coconut milk
  • 1/4 cup peanut butter
  • 2 tbs curry paste (whichever flavor; you can keep the rest of the can’s contents in the freezer, just transfer to a ziplock baggie and squeeze out the air)
  • 2 tbs fish sauce
  • 3 tbs lime juice
  • 5 tsp minced garlic (I cheat and use the pre-minced jars)
  • 1/2 cup broth or stock
  • 1/2 tsp ground ginger
  • 1/2 pound firm tofu, cubed (I freeze the cubes rather than pressing because it’s so easy and it works)
  • 1- 2 pounds frozen veggies, pepper and onion mix, or cubed veggies of your choice.

Whisk all but the tofu and veggies together in the crock (or pot on the stove). If in crockpot, stir in veggies and cook 3 hours on low, adding the tofu for the last half hour or so. On the stovetop, I think I’d bring the sauce up to just simmering, then stir in veggies first (long enough to cook) if fresh, veggies and tofu together if all are frozen, and simmer 10-15 minutes. Serve over brown rice.

I cooked some masoor dal for dinner tonight that came out pretty well:
heat up onion, garlic, ginger, turmeric, chili powder, and garam masala in a little bit of neutral oil, throw in 1/2 cup red lentils, 1.5 cups water, and half a can of diced tomatoes, bring to a boil then simmer for 30 minutes.

Baked beans on potatoes/sweet potato
Sweet potato lentil shepherd’s pie
Faux meat shepherd’s pie
Daal and rice
Hummus and toast
Chili
Tacos and quesadillas
Curry channa and veggies
Roasted veggies and hummus or goat cheese or sunflower seeds
Peanut sauce on rice and obviously a ton of veggies
Sweet potato garlic soup
Cauliflower soup
Lentil soup with fake bacon bits
Mushroom lentil or white bean red wine stews
Bean burgers
Carrot soup

If I do spaghetti I throw hempseeds on top.
In winter I survive better without tofu than in summer

Oh yes, I have LOTS of beany meals. In my freezer I currently have lentil and black bean chili, black bean chocolate chili, and misir wat. I finished the chana masala last night and am probably going to make more of that, and some white bean chili because I have white beans.

I can’t eat beans more than once a day though unless I want to be constantly farting and unpleasant to be in the same room with.

Does anyone have any delicious beet recipes? I got some beets because I want to try them fresh and well I have been paralyzed with what to do with them.

I only do simple things with beets

Raw beet apple salat (both grated with a vinaigrette)
Beet carpaccio with goat cheese and a drizzle of olive oil and black pepper
Cooked until tender with a bite, peel and eat with good potatoes with butter and salt (this was the favourite of my great aunt, so I had it a lot during my childhood. This is also good as a mash with steak and onion rings

OK, for Valentine’s Day I am baking brownies for Boyfriend.
I don’t think I’ve ever made them from scratch? So, hit me up with your best NORMAL brownie recipe (traditional, chocolate only, no weird shit in them.)

I only have cocoa powder, no baking chocolate or chocolate chips, so ideally it wouldn’t need that as we’re not shopping in person these days.

Does anyone have a good sweet and sour chicken recipe? Usually I just grab one off the internet but the one I came across last time was … not great.
