It’s really good in rice. Use the coconut milk plus however much what you need to make up the right amount of liquid for the rice. So yummy!
OMG, yes. A small amount of minced garlic added in makes it even better.
I got a jar of marinated artichokes, that I didn’t order, in my last grocery delivery. What should I do with it, considering that I do not have ANY of the ingredients for spinach artichoke dip which I love and would otherwise make under normal circumstances?
I loooooove artichokes. Some of my go-tos:
Pizza topping
Pasta salad
French bread + goat cheese + artichokes
Artichoke pesto pasta
Artichoke tarte
Artichokes as a side with pita, hummus, cucumber, etc.
Artichoke frittata
Stuffed peppers with artichokes, lentils, whatever!
Artichoke and olive tapanade
Oh man, I wish I had any of my homemade pesto left! And I’m a long ways out from a basil harvest.
I think it would be great on pizza! And I think I have some rotini for pasta salad. Maybe add some tomatoes and bell pepper. I’d have to read the label to see what they’re marinated in, otherwise maybe throw some balsamic in there.
I have a lot of eggs too, wouldn’t think of adding them to frittata but that could be good.
If you go the frittata route you may want to dry them off a bit. Also if you taste the marinade and it’s pretty good you can just combine that with a bit of vinegar for the pasta salad dressing! SO GOOD.
I read the label and it’s oil, vinegar, salt, and “spices.” So yeah, basically salad dressing.
I think I am going to go with the pasta salad, that will be quick and easy and use up some odds and ends in our kitchen.
I just made a batch of pasta salad and there’s so much of it! It’s no wonder why folks bring it to group gatherings. I’m only one person it’s a good thing it’s so tasty.
I got both green garlic AND garlic scapes in my CSA box. Hit me with your best recipes.
My thoughts so far is, pesto for the scapes, and subbing the green garlic for chives in chive pancakes. I also discovered that one can roast the tiny baby garlic bulbs so I will do that as they are attached.
But, I have a LOT of green garlic. Maybe toss with pasta and add some cheese? Hm.
I’m kind of obsessed with tempura’d scapes.

So this is really close to what we had at one of our favorite restaurants. I’ve made this one a couple times but I’m still trying to get my tempura technique down
OMG, that’s a lot of oil. Like, I’m not sure we have 3.5 cups of oil in the house right now. But, well, that’s what tempura is.
I envy you your garlic scapes. Scape pesto for sure!
I usually chop and freeze the scapes to put in soup and other stuff as add ins.
I’ve been making this once a week for the past month or so. It’s SO good. I know rice is easy and doesn’t really need a recipe, but the combination in this one just works really well. I use tomatoes w/green chiles instead of plain tomatoes. This is so good with eggs, in tacos, w/beans, whatever…I eat it like every day haha.
This sounds really good.
