Compared to Goya they cost a lot more, but Rancho Gordo has amazing beans. They specialize in heirloom beans, and you can buy them on their website. That’s where I get my black beans (they only sell dried, though, not sure if that’s a problem!).
Kuhn Rikon knives are very good for the price. They’re inexpensive enough that I would be willing to dishwasher them (and often do for the little paring knife).
Here are two independent knife sharpeners who do mail-ins. I’ve used the second one in-person and she did an amazing job. Have spoken to the first at a farmers market but didn’t have my knives with me at the time.
Victorinox knives often get good ratings and tend to be lower priced.
I will always recommend Ikea knives. I genuinely enjoy using them, they hold an edge pretty okay (definitely need sharpening once or twice a year if you use the knife a lot), and they’re cheap/plain enough that tossing them into the dishwasher doesn’t feel like sacrilege.

This is why I use cheap knives from the restaurant supply store. I have a couple nice ones for specific things, but daily slicing and chopping with a $6 chefs knife or santoku is where it’s at

In the US, you have to keep 7. Not sure about other places.
Can you set the kiddos to scanning documents past the 7 year mark so you have them, but also opening up filing cabinet space?
