Okay, budgeting plans for this week
-find two sundresses for my vacation, 3 if I can do it under $100. Use the brands from Marcela and allhat. Make sure I’m sizing up so I can use them here as it warms up

  • back to meal planning
    Breakfast
    Smoothies, tofu tacos, oatmeal
    Eggs (boys)

Lunches
Leftovers (palak, eggplant, dhal, rice)
Chicken on salad (g)
Burrito bowls (make black beans, make corn salsa)
Coleslaw
Quesadillas/tacos
Beans and chips

Dinners
Monday - leftovers
Tuesday - roasted salmon or mushrooms with potatoes and coleslaw
Wednesday - burgers (frozen beef, homemade bean) or at parents
Thursday - probably takeout dentist plus getting @smacky
Weekend - depends on smacky and veggie box

Other expected spending this week

  • business coach
  • mall trip with smacky et all
  • new toilet seats
  • birthday gifts (kid, brother, BIL, Dad)
    -maternity bathing suit?
    -walmart groceries including cat food.

Budget Projection 1/31 (OMFG how is it February)

Monday: Rent will process. We need to go to Target while we still can for some essentials (TP, paper towels, Sweet Baby Ray’s :laughing:). Got a $10 gift card last time we were in there due to some random promo we qualified for. Goal–spend under $25.
Tuesday: A friend is coming by for dinner. No spend day.
Wednesday-Thursday: Expecting a storm. No spend days
Friday: No plans yet. Maybe we can pick up my wedding ring? Already paid for. If we do that, though, we’ll have to stop by our favorite candy store a block over for a Valentine’s treat…
Saturday: Groceries for next week. We’ve been steadily hitting $95ish

Upcoming Wedding Expenses:
Jewelry and shoes: $200 total
Ketubah (gifted, we just have to design or choose one)
Favor: $650
Siblings/officiant gifts: $300 total…unsure what these will be

I’m doing a great job of not taking any money out of savings for wedding stuff thus far. I put away a good chunk of my EOY 2021 bonus in my IRA and investments. The rest has hung out in checking to pay down the CC when we’ve completed a round of deposits. This feels nice! I may have to dip in to savings when it’s final payment crunch time in March, but so far so good.

Thought I would share some food I’ve made/eaten lately :slight_smile:


Your eyes do not deceive you. That is indeed a lime and this is the tiniest Bahn MI sandwich I’ve ever made and possibly of all time. I thought these would be normal sized rolls but I ordered them on instacart from the co-op :laughing: at least they are tasty! The condiment is aioli with chopped cilantro (I didn’t think loose cilantro would stay on this tiny bun! The carrots are pickled, which I already had made in my fridge but just sliced up. There is also marinated air fryer tofu, cucumbers, and yves round bacon (vegetarian). I usually like daikon but my experiment with freezing daikon taught me that you do not freeze daikon unless it is pickled so…I had to toss that. I also usually put on jalapeño peppers but I totally forgot BECAUSE LOOK HOW SMALL. My husband actually laughed at his plate, lol, I served him 3 at once. :laughing:

I like this rule. I think I might have Ponder pick up Bahn Mi for us for lunch tomorrow.

I really love being a “regular” at a coffee shop but I found chocolate sauce that lets me make delicious consistent hot chocolates at home and now I don’t need the coffee shop. So maybe I just go once a week to feel special.

Resisted urge for takeout and made a vaguely unsatisfying meal at home. Highlight of the meal was airfried halloumi cheese fries from aldi which will likely make a reappearance another night with kibbe and maybe some tabbouleh.

I’m having a hard time figuring out meal planning when we’re moving in a month. I feel like I’m walking a fine line between use up what we have and do not buy additional stuff that we won’t use up, in order to use the stuff we have. If that makes sense.

I am largely down to foods that I can only eat in small quantities because sodium. I’ve been eating a ton of chili which I make without anything containing salt, and that’s been fine, but I don’t want to eat it every single day. I made a huge pot of it which used up the rest of the dried black and pinto beans.

If it wasn’t for my stupid high blood pressure we’d just say fuck it and eat out more, honestly. Boyfriend is probably going to order a pizza tonight because he’s low on food and we can’t fit in a grocery run before the storm that’s coming.

I used to live in a building with a fancy local coffee shop in the ground floor retail space. I would go on Friday mornings and spend time journaling before work. It was only once a week but I was definitely still a “regular”.

I’m making brown rice. Hopefully it is as easy to make a variety of brown rice salads as I think it should be.

I used to play SCRABBLE with friends in a fav coffee shop. The owner loved it because we drank tea and ate for 3 hours! There were about 10 of us in the group. :pensive:. I sure miss those days!

I’m busy making use of a private library today. It comes with membership to a particular group. I picked up 4 books. I have them for a month. I’m hoping to be through them in a couple of weeks. We’ll see.

Analyzing grocery receipts today. Then organizing a budget meeting with DH for tomorrow morning.

I wanted to do lots of cooking this upcoming week but I’ve been down for a couple of days with no letup, so it looks like another low cook week is in order. Here’s what I’m planning, btw loaded baked potatoes are the best low cook meal and if you haven’t tried them you should!

Breakfast- Eggs/Fruit Protein Smoothie

Lunch- Ham and Cheese Sandwiches + Chips

Dinner- Loaded Baked Potatoes (w/ homemade freezer chili, sour cream, cheese, corn, jalapeno)

Other- Canned Soup/Tomato Pasta Soup; Yogurt ; Apples ; Pears ; Frozen Blueberries; Bananas ; Bag Salad ; Instant Noodles
