Also a big fan of sour cream. My ultimate comfort food is chips and a sour cream dip although I will put chips in straight unflavored SC. I have also been known to just eat a few spoonfuls. I was exhibiting restraint on this thread last night but it feels safe to share now

To be clear, the reason I stress about the sour cream running out is that then there might not be any for ME. For my tacos, or the quesadillas I make with leftover fajitas when we get Mexican takeout. Or just to dip tortilla chips in. With or without salsa. Sour cream is an amazing foodstuff.

You can use it to make a quick tomato bisque, puree with some whole roasted tomatoes, roasted onions, and a little heavy cream and parmesan. I also use tomato sauce (plain canned) as a base for soups all the time (minestrone, tortellini, chili) and you can use it as a base for some types of curry too. You can also freeze tomato sauce! It’s also good as a meat sauce to top polenta.
I put it into cheesy veg soup today, and ate it with chicken quesadillas. The shadowy one doesn’t like it, so I’m always concerned I’ll forget and then it will go off.
My youngest son has been on a mission to help me save money and found YouTube TV for me when my cable promotional TV ends in April otherwise my bill will go up to 205/month for cable and internet. It has 85 channels including what I watch, DVR and a TV guide like I am used to. This will save me 75/month. I was paying 54/month for my cell service and now pay 15 with T-Mobile.
We’re attempting homemade dumpling dough for the first time today. This will be a game changer if it works!
I can now make a chocolate milk for myself with a tiny whisk that is better than the coffee shop. Next up is working out for to hear it nicely. I still want to support them but this is for all the other times I want a nice drink.
Compost service sent out a reminder to adjust payment plans based on how much of the can you fill up. They also offered a free month if you paid for an entire year! I have been using them for years now and I’m hoping to see them grow. An annual subscription model makes sense and will hopefully help them plan better. So I was able to up the amount of the can we can use (we are starting realize we can compost most of our waste, took a while to make that adjustment), switch payment plans, and still pay less. Woo!
Grumble grumble grumble, I have to either change bins or cancel because mine is unusable. I need to decide this before the Feb. payment hits. Maybe that email will spur some people to adjust their subscription so I can use it again? Though, there are 9 households using the same bin, that seems like a lot given the bin size.
According to the website, the bin hasn’t been emptied since before Xmas (and I did not get a “your bin was emptied” email so I suspect that is true). It’s supposed to get emptied again on the 19th? I guess we will see.
I had to throw out my compost last weekend, I had 3 gallons of it sitting in the fridge just waiting for the email so I could rush over and actually get it to fit in the bin, and it was starting to smell.
I should just cancel. I’m paying for a service we’re not using and I have to cancel in March anyway. I could switch bins but how do I know another bin doesn’t have the same issue?
Dang, I’m surprised they let that many people use one bin. I think one other subscriber uses ours. It is never full. Sorry yours isn’t working as well!
Just cancel it. March is only 2 months away. Think about this: whether or not you compost for two months is neither going to save nor destroy the planet, or even move the needle a millimeter in any direction. You need simplification in your life right now, with planning for the big move. Cancel it today.

I am still paring down our supplies to my “needs,” which I determined a while ago was: what we use in (set period of time) and one back. This works, but it’s directly at odds with my desire to pay as little as possible, i.e., buy in bulk when I can.
My answer is to buy in bulk the items which won’t go bad and/or take the least space to store, and/or are things we will use up in < 1 year. For nonperishables, this works great: paper stuff, lightbulbs, etc.
I’ve changed the way I cook, since lockdown. These days I make myself use something from the stored foods, no matter what. When I do it right, I use something from the freezer, the pantry, and the fridge. So rice (pantry) with peas (freezer), and sauteed chicken (freezer and fridge) works. Also, I’m making myself when cooking vegetarian to always cook balanced proteins. If I cook beans, I’ve always got corn or rice or barley or another grain along with it.
I actually have holes in my pantry periodically now and I’m using up things like canned beans, which I used to buy but rarely used.
What kind of strategies do you use to use up your supplies in a timely way? Do you buy in bulk? Do you have a dedicated area for deep storage?
I bought bulk dried beans and rice in 2020 for $45 (25 lbs each of pinto, garbanzo, and black beans and rice). At the beginning of each week we cook 2-3 cups of beans and 2-3 cups of rice and then use it during the week to make whatever cuisine we want. We are still eating through this, we have replenished the rice 3-4 times but there are still a ton of beans!
When bulk buying I look for sales and buy more of something if it is on sale and only enough to get to the next grocery shop if it is not. (I currently have 12 tubes of tooth paste in the basement because it was on such a good sale).
My first priority is not throwing any food away. Then I try and plan meals for the week based on what we have on hand (similar to what you’re doing).
Similar to you, I only buy in bulk when we use it regularly. I don’t want to get into a situation where I stocked up on extras and they went bad—that’s just as bad as paying too much initially in my head. Because I have extras of this things, then I can be more patient for sales.
