Okay so the one pan part of this was a damn dirty lie. It’s two sheet pans plus a billion bowls (or single use plastic bags).

But the marinaded chicken turned out delicious. The extra marinade on the broccoli wasn’t worth the effort. The pineapple was good but I always love pineapple. I might try to tweak this in the future to be less dish-intensive.

The roasted bbq chicken meatballs, cheesy rice, and tomatoes/broccoli slapped and was super quick to put together!!!

This week! Doubling batch of bean burgers to bring to my sister and her new bb. Will serve with avocado and sweet potato tots

Opting for frozen corn and frozen green beans as sides to mitigate any parasites as much as possible, but I do have a bunch of kale left from last week that I will be making into chips. I figure that not eating it raw is a good way to go

We have done the cheesy gnocchi!!

It was indeed easy and delicious. Pipsqueak did not eat it but she doesn’t eat anything mixed together.

My kid will eat plain roasted broccoli, plain baguette, and plain white beans so it’s an easy one to keep her portion on the side. She also used to reliably eat ceasar salad dressing but that has suddenly changed over the last 3 days :upside_down_face:
