Meal planning moving slowly today
A beloved Australian staple, a zucchini slice is an eggy, frittatalike lunchbox staple that’s baked until it’s firm enough to slice and eat out of hand. Most versions include bacon, but in his book, “Snacks for Dinner” (Harper Wave, 2022), Lukas...
This hands-off path to pulled chicken results in a juicy, saucy tangle of meat for a crowd. The combination of boneless chicken thighs and breasts creates a mix of feathery and hearty shreds, while cooking the meat slowly in barbecue sauce ensures it...

Could do this served over greens
This easy chicken sheet-pan supper brings bold, warming flavors with minimal fuss. Tossed with ras el hanout, the chicken roasts alongside potatoes, sweet peppers and chickpeas, creating a richly flavored dish that practically makes its own sauce.

And I already have carrots and pita so this would work
Salty bites of crisp, golden-brown halloumi play well with sweet and tender caramelized carrots and red onion in this warm salad that takes inspiration from fattoush. Here, kale and crunchy toasted pita add enough bulk to ensure this dish is...

Okay so the one pan part of this was a damn dirty lie. It’s two sheet pans plus a billion bowls (or single use plastic bags).
But the marinaded chicken turned out delicious. The extra marinade on the broccoli wasn’t worth the effort. The pineapple was good but I always love pineapple. I might try to tweak this in the future to be less dish-intensive.
Sheet Pan Thai Coconut Peanut Chicken with Pineapple and Broccoli is a MEAL IN ONEE baked in ONE PAN with quite possibly the best Thai Peanut Sauce ever complimented by sweet, slightly caramelized pineapple!

This week! Doubling batch of bean burgers to bring to my sister and her new bb. Will serve with avocado and sweet potato tots
Tasty and effortless, store-bought gnocchi offers a much-needed shortcut for busy weeknight dinners. You can bypass boiling a pot of water for the gnocchi, and instead simply give them a quick sear over high heat, which creates perfectly crispy...
Best friends of cooks who are short on time but unwilling to sacrifice flavor, boneless, skinless chicken thighs are slow-cooked to tenderness with hoisin, garlic and tomato paste for an incredibly easy, saucy braised chicken that is subtly sweet and...
These black bean burgers are flavorful, satisfying and easy to make ahead. With a smoky chipotle mayo and avocado on top, they're delicious!

Opting for frozen corn and frozen green beans as sides to mitigate any parasites as much as possible, but I do have a bunch of kale left from last week that I will be making into chips. I figure that not eating it raw is a good way to go

We have done the cheesy gnocchi!!
It was indeed easy and delicious. Pipsqueak did not eat it but she doesn’t eat anything mixed together.
Tonight we are trying this:
With components of both panzanella and Caesar salad, this meal gets extra heft from charred broccoli and a couple cans of white beans. The beans do double duty here: Some of them get smashed into a creamy, lemony, and anchovy-rich Caesar dressing,...

My kid will eat plain roasted broccoli, plain baguette, and plain white beans so it’s an easy one to keep her portion on the side. She also used to reliably eat ceasar salad dressing but that has suddenly changed over the last 3 days
