Baking- french yogurt cake with rhubarb, chocolate chip cookies
Chicken Biryani, corn on the cob
Ramen, shredded chicken leftovers, frozen burrito, mushrooms? strawberries. This is not feeling cohesive but definitely ramen so kids eat
Spinach dip, watermelon (tortilla chips, carrots, crackers, bread)
Fish/tofu bowls with rice, corn, shredded carrots, mushrooms if we have any
Takeout or pasta with red sauce
Veggie soup
Make and dehydrate soup and pasta sauce, cook too much and dehydrate rice?
I am home from a wee trip and our food situation is waffles and ice cream. I’m thinking stir fry. Or maybe fried rice.
Haven’t been posting because we were eating the same things on rotation, but mixing it up this week.

I have loved ceviche forever but it never occurred to me to make it at home. Huh.
There is a recipe out there (widely out there) for a yogurt cake that is all about proportions with a yogurt tub. I need to find it, and I’ll cook down my rhubarb with some sugar to have with it! (Maybe on or in, I’ll see how thick the batter is)
One of our favorite summer dinners! We usually use cooked shrimp for convenience.
What do people do for summer meals that won’t heat up the kitchen too much?
Currently on the plan I have paninis and cold peanut noodle salad and nachos, and we just had chicken and potato salad last night.
That is when the instant pot is great for proteins! Love to make a big batch of carnitas

Instapot, toaster oven and one pot recipes I think.
We make heavy use of instant pot, slow cooker, air fryer, grill, and electric griddle. Taco meat cooked in the slow cooker or instant pot and tortillas heated up on the griddle, things like jambalaya that are protein + veg + rice all cooked in the slow cooker, protein cooked on the grill + veg cooked in the air fryer, etc. On Monday I made teriyaki chicken bowls with rice, broccoli, and pineapple utilizing the grill + instant pot.
We also like cold salads. I’d add cowboy caviar, pasta salad with pesto and feta, and ceviche to your list. If there is a better combo than shrimp cocktail, air fryer fries, and Caesar salad I haven’t had it.
I tried to convince wife we should have a fast food picnic last night and she did not go for it.

We used to do couscous salads, which was great because it could be done with the kettle. Alas couscous is now off the table, but we can still do glass noodle salads. (but my orange segments with almonds doesn’t really work with noodles or even orzo)
Eggs cook super quickly
Tuna melts if you have a toaster oven with carrot sticks & hummus
Roast chicken from the grocery store + green salad
Depending on whether you’re ok with any stovetop heat, corn fritters, salmon cakes are also pretty fast
We grill multiple meals with of chicken at once, and then add it to salad, stir fry, etc.
tomatoes were on sale, so we bought two dozen, and this morning, because it wasn’t too hot, I made a batch of sashi paneer (butter chicken) sauce for the freezer
I think I will make a second batch shortly with added red lentils. It gets blended anyways, and that will add easy fiber and protein
On a trip recently where we ordered grocery delivery. We went with a lot more convenience items and the big hits were the frozen family sized meals.
I now want to figure out how to make this at home! It seems like a cooked protein, veg, starch, and sauce are all it is. You dump the bag of protein/veg/starch into a pan on the stove or in the oven, warm, then add the sauce.
I think I can make some great sauces with the 1/2 cup souper cubes! It seems like hello fresh was a hit for us because the sauces were so tasty.
Any thoughts on sauces/meals that fit this mold that you would enjoy? I’m excited to start making a list and trying it out.
