I too am doing pasta with sauce for dinner all week (though I’m making my own from a can of crushed tomatoes because most jarred sauce has too much garlic for me - I’m unfortunately intolerant).
Lunches this week are a fajita bake over rice. I roasted green and red peppers, tofu, black beans, and corn with paprika, cumin, and salt. I’ve got avocado, sour cream, and salsa to put on top.
It was in the 60s when I was making my meal plan and I did not consider that NYC would turn into a swamp by the time I needed to use my oven.
Last week was:
Roast chicken from the deli, bagged sweet potato, rolls
Bagel pizzas (bagels from freezer from long ago BOGO sale)
Chicken salad sandwiches and cheddar broccoli noodle side packet
Bao and peanut noodles
Spaghetti and meatballs and salad
Burgers and fries
This upcoming week is still mystery because the stuff on sale is things like Cheezits, berries, hair gel, cereal, etc. so not really helpful for sparking meal ideas.
Pending cooperation of the uber eats shopper next week:
Tonight- shepherd’s pie/just the beyond beef for one of us
Cream cheese spaghetti with salmon or not (kids may starve)
Beef nihari but milder, palak paneer, rice
Eggs/tofu/pancakes
Drumsticks/jerk tofu
Fish fingers, baked beans, toast/potatoes
Ramen or whatever
Lunches
Bean salads
Tuna sandwiches
Turkey and processed cheese roll up sandwiches
No frills had the uber eats 30% off! What a blessing
Not for the week, maybe over the next two? So far for this “week” I’ve made BLTs and the cheesy bean bake @a_hardie originally shared. I’ve made it a lot of times now because Son loves it and it’s super simple and fast. I turn it into burritos for him with added sour cream and avocado, although he also doesn’t mind just eating it straight out of the pan! He’s turning into a real bean lover so I’ve been leaning into it. Good for us and cheap and all that.
Those coca cola wings have been on my list for a long time but I somehow never seem to feel like making them. Mostly what I’ve added to the list is super simple and quick dinners since I don’t seem to be up for much more lately.
I’ve made a similar vegan taco “meat” with lentils and I will probably Frankenstein those recipes together for a protein/fiber boost. (Also somehow ziti hasn’t tried lentils yet???)
It’s so good. You can make it veg if you use tofu and chickpeas in place of the chicken, but the chicken version is my fave because the schmaltz cannot be matched no matter how much extra butter I put in the veg version lol. Don’t skip the peppers at the end, they add such a nice bright acid!!!
Accidentally started a P theme and it helped me pick the last two meals.
Pancakes (and fruit leftover from the weekend and scrambled eggs)
Philly cheesesteak sandwiches (using leftover beef)
Pulled pork sandwiches and maybe mac and cheese on the side
Pesto gnocci with sun dried tomatoes and broccoli
Pizzas (probably margarita and pepperoni)
