It’s been so long since I was able to use spinach that i don’t have a go-to recipe. But if I were to make a spinach one, I would try this, since I know I like the Julia Turshen one I already make. And I remember when I used to make it with spinach, i used frozen spinach. The idea of having to sauté it beforehand, like some recipes suggest, seems silly. A bit of creative application but it’s happening

If you want to watch someone make a lasagne for multiple hours Samin Nosrat did a 100% from scratch lasagne cook along during COVID lockdown. She’s usually very accessible so she might have not 100% from scratch simplified version too.

Its too wet but I knew that was likely since the only mozzarella I could find was buffalo in liquid :joy::joy:

It’ll be perfect I bet after it sits for a few hrs or overnight in the fridge. I highly recommend leftover lasagna for breakfast, it’s a complete meal!

It looks delicious! Saucy and cheesy is my favorite.

Yeah, I often go to her site first when I want to try something new because her recipes usually overdeliver. At the least, you can count on them. But often, they are even better than what I expect. I like Smitten Kitchen a lot but the failure rate/not as great as I expected is a little higher there.

Seconding this assessment all around.

Lasagna has to sit for an offensive amount of time to solidify

There’s the hour ish to bake and the ten years to solidify. They never mention that in the recipe.

Why is Deluxe Waffle easier for me than Daily Waffle? I’m thinking the answer is mathematical but I like word games, not math games. Or are longer words easier to guess than shorter based on possibilities? Or maybe they are longer due to an inflectional ending which makes them easier to figure out?

Do I need a European SIM card for my phone to be able to navigate comfortably? Last time I just used wifi but that was in 2018.

Any advice on what steps to take to get one also welcome - I have never done this before. I have Mint and I think I heard it is harder with Mint? Or even impossible or something?

When Daughter went to Europe three(?) years ago, we had Mint and it did not work, even though I bought an international-something for it that they said would make it work. I spent a lot of time on the phone with customer service and they could not get it to work. I ended up buying her eSims for each country she was in from Airalo.

I have also been using Airalo esims when I travel abroad. There’s a learning curve to getting them to connect, but once connected they’ve worked well everywhere I’ve been.
