They are much more delicious than you are imagining. More so because you make them at most twice a year.

Cranberry beef.

Get a ~3 pound beef roast, one can cranberry sauce, and one packet powdered onion soup mix. Put the beef into the slow cooker. Mix the cranberry sauce and soup mix powder, then put that onto the beef. (As a bonus, wrap a couple good sized sweet potatoes in foil beds and put them on top/side of the beef so they’re in the slow cooker with the lid closed but not down where all the liquid will be. They’ll steam all day as a no effort side dish.) Slow cook eight hours.

Can be served with stuffing if you want to lean into the Thanksgiving vibes or just a bagged green salad or something like that.

Roast veg and tofu pile! Making rice and Dijon mustard sauce for it. Tofu is marinaded with miso and honey.

Ty :sob::heart:

I had to have ice cream while I cooked tho because I didn’t eat enough before now and was getting shaky.

I wish I handled lack of food better but I get dramatically stupid and the shakes.

I almost always have to snack when I make a big meal too. Unless I start cooking right after lunch. We need fuel!

I recently looked in my freezer and it is only ingredients. I need to spend a weekend replenishing our freezer meal stash. Why am I completely blanking on what we want to make like I have never freezer prepped before?

I’ve had this new fridge/freezer combo for a year, and I still can’t figure out how and what to make for it to support us from an energy and cost savings perspective.

Yum!

I’ve been setting out some snacking nuts in a cute little dish while I cook lately and it feels fancy + less shakies. Our trader Joe’s had these Rosemary marcona almonds that are delicious and perfect for setting out in a little dish.

I’ll make Friday’s chicken (a recipe from Cooks Illustrated magazine) on Thursday since DH is going out of town this weekend. I will definitely order Taco Bell at some point but ideally not Friday!!

I made the tofu piccata last week but just skipped all the fiddly bits (I just chopped up cold medium firm tofu and added it in at the end to the warm sauce). I thought it was fine, spouse raved about it. Would have been better with air fried tofu or starched pan fried tofu but who has the energy for that lol

I’m making it rn!!! Smells great. We are a big piccata house so I’m excited to try the flavors a new way

My sauce did not emulsify but otherwise we liked it. I give it like a 6/10? Would prefer…regular piccata haha
