I’m not a super snacky person but hummus and carrots and bell peppers are nice. Hummus can be store bought or DIY’d, I buy the carrots that are already cut up into sticks but I do have to cut up the peppers. The homemade part is a big hurdle for me actually eating the snack. For store bought hummus I tend to wait till there’s a buy one get one deal on the brand I like (every few months) which also helps with novelty instead of being like “Oh, the same old snack”.
Sorry if I’ve shared this already but I have a daily snack plate that I love.
- Whatever fresh veggies are in the fridge
- Berries
- 2 hard boiled eggs
- Walnuts
- Pumpkin seeds
- Almonds if I feel like it
I really like the Costco dehydrated sweet potato, I bet you could make them yourself.
This week’s meal plan:
Chicken and waffles (popcorn chicken on bogo)
Blueberry french toast casserole, inspired by the french toast stick conversation (blueberries on bogo)
Fancy grilled cheese with cranberry/orange dipping sauce
Shepherd’s pie (make double and freeze the other)
Freezer ravioli with alfredo goat cheese and sun dried tomatoes, spinach, white beans (goat cheese is bogo and I do love it so)
Honey garlic teriyaki pork loin from freezer
Black beans and yellow rice
I got a deal on flashfood for stracciatella cheese (like the inside of burrata), but there was an internet glitch when I purchased, and I ended up with two containers.
Tonight it will be spaghetti with meat sauce and cheese, but I’ll need to figure out (quickly) what to do with another container.
I like making muffins with flax seed instead of eggs for the fiber boots (1tbs of flax soaked in 3 tbsp water = 1 egg).
We make blueberry muffins using the mini boreal frozen blueberries from trader Joe’s and they are perfect for muffins!
(I usually Google a random recipe each time).

Ohter ideas:
I made my own nut mix with pecan pieces, roasted slivered almonds, and pepitas. It’s a different texture than whole nuts. Often I put this on top of plain yogurt but sometimes just have a handful.

My kids no longer eat pasta with red sauce or chicken burgers so all planning is off… today we’ll try making nuggets together to see if that makes it a safe food again.

What’s wrong with the children of this generation!? My kid won’t eat red sauce either, including pizza sauce.
She will eat plain beans of almost any variety straight from a can though so I forgive her.

it’s not that i won’t eat red sauce, but pasta with red sauce is so boring to me. i need some meatballs or cheese or something to make it feel like a meal.
Cheese and peas, that’s what my mom did to make it a meal. Chopped carrots are also great in red sauce!
Okay but I bet you could name me like 5 meals you will eat without 4.5 of those turning out to be lies!
husband has been adding boursin cheese, it’s so good! he does a mean bolognese too with peas and ground beef, but that takes longer than opening up a jar and putting it on some pasta.
