Once I have sprouts do I remove the plastic covers? I think that’s what I did last year but it’s still cold here, like freezing at night. I do have lights and heat mats on.

yes! you will need to keep an eye on them and water them but they don’t need the humidity covers anymore.

(i’m assuming they are inside!)

Where there is more than one seedling growing should I pull the extras so each space only has one? I wanted to make sure each space grew so they got like 3 seeds.

Yes, but you can wait until they are a bit bigger/more leaves and select the happiest looking plant to keep. It’s also generally better to cut the stem at the soil level rather than pull it, to prevent disturbing the other plant’s roots.
