we back country camp - dehydrated is lighter, and we aren’t allowed bottles or cans in the back country (and they are bloody heavy anyway).
I can dehydrate for seven days in the woods for a family of four, and fit it all into one bear barrel. No cooling required.
I also found, when I front country camp, that I’m just not good at ice? And so it was safer to just dehydrate for that too
**Editing to add - dehydrating also means all prep work is done prior to trip. So, all dinners are boil a pot of water / pour in contents / let rehydrate / serve. Which makes me happy camping
I am looking for suggestions for vegetarian camping food for a canoe trip. We are taking a friend canoeing later this month and need to prep food for the four of us plus her.
Breakfast: Oatmeal, dried fruit / raisins nuts. I’ll bring powdered milk for us to add to ours, she is good without
Dinner: I’m thinking I’ll do my normal dehydrated meals, but with TVP instead of ground beef
Lunch: ducked if I know. We usually do salami and cheese, both of which are out
First dinner (can be fresh): usually we cook sausages over the fire on night one - are there any over the fire vegetarian options?

We usually do a snacky lunch… might have cheese, salami, and jerky but also granola bars, protein bars, dried fruit (I love mango while I’m active), nuts. Last few camping trips I’ve made everyone a snack bag to divide things evenly, and then encouraged trading. I would actually consult with or outsource this task to your friend, basically let her make her own snack bag… maybe she likes mushroom jerky or maybe she likes Kind bars. But she probably has a better idea of packable vegan foods she enjoys.
Also may be helpful: my husband brought back some tetra-pak shelf stable tofu from a group trip that I used on a later backpacking trip. I’ve seen it in stores since, but I forget if it was at Trader Joe’s or the Asian market.
You can also browse bulk bins for dried peas and dried edamame (either for snacks or to add to meals)… But again I wouldn’t get these as a meal for your friend without consulting her…
For lunch or the fresh dinner you could do a chickpea salad. I just made one with kalamata olives, tomatoes, basil, and cucumbers and avocado with a red wine vinegar see dressing that was great (mine had feta but that’s easy to omit). I’ve also had vegan chickpea salad that’s more like a tuna salad and can be served on a sandwich. PB&J is also a classic!
Ohhh yes. Lentils would be great in that kind of thing too.
